Sometimes I feel like I spend most of my days running errands, acting as chauffeur and trying to mark items off a never ending to do list. I like to cook but on those days when I am feeling overwhelmed, preparing a complicated meal is enough to make me want to run away screaming, “I can’t take it anymore.” I could pick up some fast food but I try to use fast food as an occasional treat, plus it’s an expensive habit. Instead I try to make an easy dinner. I try to involve the kids in meal creation, although sometimes after we’re finished the kitchen is a huge mess.
After dropping off my son at school, I looked at my daily to do list and decided it was going to be one of those days. I had to make a quick stop at Wal-Mart to pick up some necessities and inspiration struck. Why not pick up something for a quick dinner? The problem was I didn’t know what I wanted. While poking around in the dairy area, I noticed Kraft Fresh Take. I’d been using the Fresh Take Meal kits to bread my chicken and fish, but the kids had been complaining about the “unreal” amount of chicken we’d been eating. I had stocked up when chicken was on sale. It didn’t seem a cause of complaint to me! When I saw a new to me flavor, Southwest Three Cheese Fresh Take, all sorts of Mexican dishes began dancing in my mind. Enchiladas sounded like a dish the kids might all agree on so I dashed around the store, grabbing ingredients. It helped that I only needed five!
To my surprise, the kids were eager to help me prepare the meal. They asked if they could make fresh salsa and guacamole. “Of course,” I said. Why would I turn down having someone else make dishes to go with our meal? We whipped up our meal in record time. I wish I could say they offered to do all the kitchen clean up, but they didn’t. I assigned laundry duty to make up for their lack of commitment. I knew they had enjoyed the meal when I found them eating the leftovers for a snack later that evening.
Want to try our enchiladas? Here’s the recipe.
- 1 Package Kraft Fresh Take, Southwestern Three Cheese Flavor
- 2 pounds lean hamburger meat
- 1/2 cup sugar or low calorie sweetener
- 1 can Enchilada Sauce
- 10 flour tortillas
- Optional: Guacamole, Salsa, Sour Cream
- Crumble ground beef into large skillet. Cook until browned, drain fat and return to pan. Add the seasoning pack from the Kraft Fresh Take, 1/2 cup of the enchilada sauce and the sugar into the meat mixture. Cook on high until mixture comes to a boil and remove from heat. Spread one scoop of meat mixture onto each tortilla. Roll up the tortillas and place in a 9″ by 13″ casserole dish. Cover with the rest of the enchilada sauce and the cheese. Wrap aluminum foil over the dish and bake for 15 minutes.
We were having such a good time eating and enjoying our conversation that I forgot to take pictures of us during the meal. That’s all right though because we were making memories instead. Isn’t that what a good meal with family is supposed to be like?
