Easy Gluten Free Marbled Peppermint Bark

Don’t you hate it when a family member tells you at the last moment they need to take a treat to work, school, or some sort of holiday event? Yeah, me too.  Or maybe you prefer not to spend lots of time preparing holiday recipes, but still want something that tastes good. No judgement here.  I’m all for any time-saving easy recipe! This easy gluten free marbled Peppermint Bark has only three ingredients and can be prepared in around fifteen minutes.  It’s the perfect recipe if you want to try cooking with kids, but don’t want the inevitable mess and possibility of exploding blenders or stoves catching on fire.  Yes, my daughter and her bestie managed to do this at both our house and her best friends house, leaving them banned from cooking for a year.   Ready to get cooking?

Before you begin to melt the chocolate, crush the peppermint candy.  Sometimes I place it (unwrapped) in the blender and pulse for 10 seconds. If you prefer -and are feeling frustrated- place the candy between two sheets of paper and hit it with a hammer. Either way works well.   Set the peppermint aside.

Melt the white chocolate bark in the microwave for 30 seconds. Remove from microwave and stir. Place the white chocolate bark back into the microwave for 30 more seconds. Remove and stir until melted.

Mix the crushed peppermint into the white chocolate. Pour onto a sheet of waxed paper and smooth into an even layer.

Microwave the chocolate candy bar following the same instructions as for the white chocolate.   Using a spoon, swirl the chocolate mixture across the top of the white chocolate mixture.

Allow to harden. You can speed up this process by placing the chocolate mixture in the freezer for five to ten minutes. Break into small pieces. Enjoy compliments for your candy making abilities.
