Easy Hamburger Stroganoff Recipe

Growing up with a vegetarian mom, I was thrilled whenever I had a chance to visit one of my favorite aunts, Clois, who would treat me to meat dishes. She’d usually keep a pepperoni pizza or plenty of sandwich meat on hand for my weekly visits, but sometimes she’d make her ‘signature dish,’ hamburger stroganoff. I’m not sure why my aunt made hamburger stroganoff instead of regular stroganoff. Maybe because it was easier, or maybe because she figured as kids we wouldn’t know the difference. My cousin and I liked it so much that on the rare opportunities I get to visit her now in her home state of Florida, she always makes a dish of this hamburger stroganoff recipe. It’s still just as much a treat as it was all of those years ago!

Easy Hamburger Stroganoff Recipe

You can use canned cream of mushroom soup or you can use our easy recipe for homemade cream of mushroom soup for this recipe. The homemade will really elevate the flavor, but it’s quicker to use the canned if you are in a hurry. I really like the flavor of garlic so I always add some minced garlic when I’m preparing the meat mixture. If you, like my cousin, don’t like garlic, it’s fine to leave it out. The recipe will still taste great. If you prefer a vegetarian version of this dish, you can replace the hamburger meat with a meat substitute. I’ve used the Morning Star Hamburger Crumbles instead of hamburger in the past.

I usually omit the salt called for in this recipe, finding it is salty enough for my taste without it, but that’s just a matter of personal preference. Another trick we learned over the years is to not saute the onion and garlic first as the recipe originally stated. We sautee the ground beef until it’s almost done and then add the onions and garlic during the last two minutes of cooking. It really makes a difference in bringing out the onion flavor.

We like to serve our hamburger stroganoff with crusty French bread and a salad.

Easy Hamburger Stroganoff Recipe
Ingredients
  • 1 (12-ounce) package egg noodles
  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2 teaspoons minced garlic
  • 1 (8-ounce) can sliced mushrooms, drained
  • 2 (10.5 ounces each) cans of Cream of Mushroom Soup
  • (or use our homemade version)
  • 1 cup sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
Instructions
  1. Break meat into small pieces and place into a large saucepan. Cook over medium heat, stirring often, for around five minutes.
  2. Add the onion and garlic to the hamburger meat and cook for two minutes longer, stirring often.
  3. Drain the hamburger meat.
  4. Return the hamburger meat to the saucepan and sprinkle with salt and pepper.
  5. Stir in mushrooms and cream of mushroom soup.
  6. Add noodles and stir until noodles are coated with sauce mixture.
  7. Turn heat to low and cover saucepan. Allow the mixture to simmer for 15 minutes, stirring occasionally.
  8. Add sour cream and stir until blended. Cover the mixture and cook five more minutes, stirring occasionally.
  9. *Note-If using our homemade cream of mushroom soup, you can omit the sliced mushrooms. If you’re not a huge mushroom fan, leave out the sliced mushrooms.

 

Gluten-Free Adaption

To make this recipe gluten-free, substitute gluten-free egg noodles for the traditional egg noodles and gluten-free cream of mushroom soup for the traditional cream of mushroom soup.
