Someone once told me the recipes received from church dinners were the best kind. Maybe it’s because most of the people have been cooking for years and know their way around the kitchen. It’s hard, sometimes, to use their recipes because, if they are like me, they rarely measure. Instead, we add ingredients until it looks right. Once I had a recipe calling for 1/2 cup of an ingredient. My son was carefully measuring. I grabbed the bag of flour and said, “Here, I can add it.” Ashton, the food science major, was aghast. He took the flour back out of the bowl and measured it. I had added exactly 1/2 cup. One reason I like this Easy Ranch Potatoes Recipe is there is no way to mess it up. Seriously. It’s perfect for the beginning cook and easy enough to make any time.

Easy Ranch Potatoes Recipe
One of my favorite things about this recipe is it uses simple ingredients that most of us are likely to have in our home or pantry. And, there’s only five of them!
What You’ll Need for Ranch Potatoes
5 Potatoes (I use medium sized potatoes)
1 onion (I used a large onion)
1 package ranch salad dressing
1/2 cup butter
1 cup shredded cheese
Here’s how to make it
1. Preheat oven to 350 degrees.
2. Slice potatoes into thin slices.
3. Slice onions into thin slices.
4. In a large bowl, mix potatoes, onions, ranch salad mix, and butter.
5. Spread evenly in a 9″ by 13″ pan coated with cooking spray.
6. Bake for 45 to 50 minutes until potatoes are tender. Because ovens heat differently begin to check the potatoes for tenderness after about 35 minutes.
7. Remove from oven and sprinkle with cheese.

Some Cooking Tips
**Try to slice all of the potatoes the same size so they will cook evenly. I try to do the thinnest slices that I can to speed cooking time.
**Slice the onion into thin slices also to help with even cooking.
**You can substitute 3 large or 7 small potatoes for the medium potatoes. Use any type of potatoes you’d like in this recipe. I’ve used red potatoes, yellow potatoes, and Irish potatoes in this recipe.
*If you need this to be dairy free use vegan butter, vegan ranch salad dressing, and either omit the cheese or use vegan cheese. Actually, this makes it completely vegan too.
*If you need this to be gluten-free, just check to make sure your ranch dressing mix is gluten-free.
*Make slicing the potatoes and onions easier on yourself by using the proper knife. We use this Caphalon Chef Knife in our kitchen.
