Easy Southern Style Meatloaf Recipe

Bryan grew up having a meatloaf once a week. If his mom didn’t make one for the family, his grandmother would make one for Sunday dinner after church. Imagine his horror when he married me and discovered, “She doesn’t like meatloaf!” It was akin to the time I discovered he was allergic to chocolate. Nevertheless, I persevered, trying to make a meatloaf once or twice a month. Then, we had kids. Sadly for Bryan, they inherited my meatloaf DNA. They were meatloaf hating kids. Once Brittany told me, “I like it when we don’t have meatloaf.” Ashton was more direct. “Meatloaf again???” “We had a meatloaf six months ago,” I responded. “I know,” he countered, “and it’s too soon to have one again.” Fortunately for Bryan, I found this easy Southern-style meatloaf recipe and discovered I liked it and the kids were fine with it too. Bryan’s meatloaf deprived days were over as we once again added it to our menu.

Easy Southern Style Meatloaf

I think the Dijon mustard and the brown sugar help to give the meatloaf a sweet and tangy flavor.

Here’s the Ingredients

2 pounds ground beef
1 medium onion, chopped
5 slices bread
1 tablespoon soy sauce
1/4 cup Dijon mustard
1/2 cup ketchup
1 egg
salt and pepper to taste
1/4 cup brown sugar

Topping:
3/4 cup ketchup
1/4 cup brown sugar
1 teaspoon seasoned salt

How to Make It

1. Preheat oven to 350 degrees.
2. In a medium bowl, crumble the ground beef and add the onion.
3. Place the bread slices in a food processor and process for 15 to 20 seconds or until bread makes fine crumbs. Stir in the crumb mixture into the meat.
4. Add the soy sauce, Dijon mustard, ketchup, brown sugar, egg, and salt and pepper. Stir until blended.
5. Place the mixture evenly across a greased casserole or baking dish.
6. In a small bowl, make the topping. Mix the ketchup, brown sugar, and seasoned salt until blended.
7. Cover with aluminum foil and bake for 45 minutes. Remove foil and allow to bake 15 to 20 minutes longer.

Cooking Tips

Need a gluten-free version of this recipe? Substitute gluten-free bread for the regular bread.
I used Accent seasoning for our seasoned salt.
You can bake this in either a 9 by 13 casserole dish or an 8 by 8 casserole dish, depending on how thick you like your meatloaf.
