Everyone has to have a hobby. One of my favorite summer time hobbies is herb gardening. I have several herb gardens surrounding my patio, in front of our house and behind our house. You might say I am a “herbivore.” Sorry, couldn’t resist. Having so many herb gardens is great except I have an abundance of certain herbs. I’m looking at you mint, oregano, catnip and thyme. To keep them controlled I’ve began to find creative uses for the herbs. One of my favorite is this fresh oregano thyme salt recipe. It only takes three ingredients, which you have probably guessed are oregano, thyme and salt.
How to Make Oregano Thyme Salt
Step 1: You’ll need fresh 1 1/2 cups each of fresh oregano and thyme. Once you’ve picked them, be sure to wash and dry them and pick off any stems. People will be less impressed by your culinary skills if they choke on a stem.
Step 2: Coarsely chop the oregano and thyme in a food processor or blender. (If you prefer to chop them by hand, that works too.)
Step 3: Add one cup of sea salt to the herb mixture. Coarsely chop the salt mixture in the blender of food processor. (Should take 15 to 20 seconds.)
Step 4: Spread a piece of aluminum foil over the bottom of a baking sheet. Place the salt in a 200° oven for one hour. Remove from oven and stir gently. Allow to cool.
Step 5: Store in a air tight container. The colors will fade over time, but the salt will last at least six months.
These salts also make great “just because” gifts because no one has to know how easy and inexpensive they are to make. Note: This salt has a strong flavor, so only a small amount is needed for seasoning.
- ½ cups each: Fresh Oregano, Fresh Thyme
- 1 cup salt
- Remove leaves from stems, wash. Place the leaves in a blender or food processor for 10-20 seconds or until finely ground.
- Mix in 1 cup salt, blend for 5-10 seconds. Spread the herb salt mixture onto a baking sheet lined with foil or wax paper. Bake at 200 for 1 hour. Stir, break up clumps. Store in an airtight jar.
