Eden Island Chicken Recipe

It’s the holiday season and we all know what that means; lots of social activities and less time to spend on preparing meals. That’s why I turn to easy meals during this time of year. I follow the adage “never underestimate the power of a woman with a crockpot and a can of cream of something soup.” That’s why this Eden Island Chicken recipe is one that’s on our menu. It only takes a few minutes of hands-on preparation time and can be popped in the crockpot until dinnertime.

Eden Island Chicken Recipe

One of the great things about this recipe is how it uses common ingredients. There are no exotic ingredients, just common staples to keep in the freezer or pantry. If you need the recipe to be gluten-free be sure to purchase gluten-free cream of chicken soup. If you need dairy-free, you can use a vegan sour cream and vegan cream cheese. You can adjust or change the spices to your tastes. Sometimes I substitute rosemary, thyme, and garlic for the Italian seasoning.

Here’s a tip for novice cooks: When adjusting spices, always begin with the smallest amount and then add more about 1/4 teaspoon at a time until you reach the desired result.

Eden Island Chicken Recipe
Ingredients
  • 4 slices bacon
  • 4 boneless, skinless chicken breasts
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
  • 1 (8 ounces) package cream chicken, softened
  • 1 teaspoon black pepper
  • 2 to 3 teaspoons Italian seasoning
  • Optional: Rice
  • Shredded Cheddar Cheese
Instructions
  1. In a small bowl mix together cream cheese, sour cream, and cream of chicken soup.
  2. Stir in black pepper and Italian seasoning.
  3. Wrap each piece of chicken with a piece of bacon.
  4. Cooking Directions (for the oven)
  5. Preheat the oven to 325 degrees.
  6. Spray a 9″ by 13″ inch pan with cooking spray.
  7. Place bacon wrapped chicken on bottom of the dish.
  8. Spread cream cheese mixture over chicken.
  9. Cover and bake for 1 hour and 45 minutes.
  10. Uncover the chicken and bake for 15 minutes.
  11. For the crockpot:
  12. Place bacon wrapped chicken over the bottom of the crockpot.
  13. Spread cream cheese mixture over the top.
  14. Cook on low for six hours.
  15. Serve over rice. Sprinkle shredded cheddar cheese over chicken before serving, if desired.

I usually serve this over rice. I prefer balsamic or wild rice, but in a pinch, I just use instant rice.  I also sprinkle a small amount of shredded cheddar cheese over the dish immediately before serving.
