Edible Funfetti Cookie Dough Recipe

On a trip to Natchez, Mississippi in December, I  had the pleasure of trying edible Funfetti cookie dough at a shop called Rolling in The Dough. It. Was. Amazing. Since I live almost 500 miles from Natchez, I couldn’t get my edible cookie dough fix whenever I had a craving. The path was clear; I had to recreate their version at home.  I began to experiment and came up with an edible Funfetti Cookie Dough recipe that tastes similar to theirs. Because they placed their dough between cookies, I decided to do the same.

Edible Funfetti Cookie Dough Recipe:

Once I posted a picture of my creation on Facebook, several people asked for the recipe.  Between traveling, writing, and viruses, I delayed and procrastinated.  Nevertheless, I’ve finally gotten around to writing it down and simplifying it.  Why bother to make cookies from scratch when you can purchase a package of cookie dough and make them quickly in the air fryer? As soon as they cool, I spread the filling inside the cookie. These cookies have been a hit with everyone who has tried them.  One warning- raw flour can contain e-coli. You’ll want to heat treat your flour before using it in the dough.  Thankfully, it is easy to do and only takes a few minutes.

Also, I realize these cookies have A LOT of extract in them. I was trying to duplicate the flavor of the version from Rolling in the Dough. You can adapt the amount of extract to your taste. Begin with 1/2 teaspoon of vanilla and 1 teaspoon of almond. Add more until you get the flavor you prefer.

You can make other types of edible dough using the basic recipe and omitting the almond extract.

 

How to Heat Treat Flour:

Preheat the oven to 350. Spread two cups of flour onto a cookie sheet.  Toast the flour for five minutes. Allow the flour to cool before using it.

Edible Funfetti Cookie Dough Recipe
Recipe Type: dessert
An easy edible cookie dough recipe. You can jazz it up by spreading the filling between sugar cookies.
Ingredients
  • 1/2 cup unsalted butter, melted
  • 2/3 cup granulated sugar
  • 1/4 tsp salt
  • 1 cup all-purpose flour–see note for heat treating the flour
  • 3 Tbsp heavy cream
  • 1 tsp vanilla extract
  • 1-2 tsp almond extract
  • 3 Tbsp sprinkles of your choice
  • 1 package refrigerated sugar cookie dough, optional
Instructions
  1. In a large mixing bowl, add the butter, sugar, and salt. Mix until butter is creamy.
  2. Add flour. Stir until blended.
  3. Add the cream, vanilla, and almond extract. Begin with 1 teaspoon of almond extract and adjust to your personal tastes.
  4. Stir in the sprinkles.
  5. Slice cookie dough into 16 rounds. Cook as directed on package or cook in the air fryer. (See directions below.)
  6. Allow cookies to cool. Place a heaping tablespoon of filling onto 8 of the cookies. Top with remaining 8 cookies. Store in the fridge.

How to Bake Cookies in the Air Fryer:

Preheat the air fryer to 350.
Slice the cookies into 16 even slices. Place 8 slices of cookie dough onto a piece of parchment paper sprayed with oil. Add the paper to the tray. Cook for 8 minutes. Allow the cookies to cool on the parchment paper before removing them. Repeat the process with the last 8 slices of cookie dough.

Edible Funfetti Cookie Dough Tips:

*Do NOT bake this cookie dough. Because it doesn’t have eggs or other essential ingredients in it, the cookie will not bake correctly. 
*Make it gluten-free by substituting an equal amount of gluten-free one-to-one baking flour for the regular all-purpose flour.
*Store the cookies in the fridge in an airtight container.
*Make M&M dough by omitting sprinkles and almond extract and adding 1 cup plain M&Ms.
