Did you know the new Purina Beyond Simply 9 dog food is based on nine natural, recognizable ingredients plus vitamins and minerals? The Purina chef, Amanda, develops Beyond inspired natural recipes based on these formulas for humans too! I planned to try her Egg Battered Rosemary Chicken Breast recipe for weeks, along with a picture of Rio and Minnie enjoying their bowl of Simply Beyond. Unfortunately, my cat, Okie, found the bag the moment it arrived, and when my back was turned for minute, ripped it open and began enjoying the contents. No problem, I thought. I picked up another bag while I was picking up ingredients for the meal. I hid this bag in the closet until I could take pictures. Instead, I left the closet door open one day while I was getting something out. I heard “rip” and looked down to see Okie had followed me, found the bag, ripped it open and was contentedly chowing down on the food. Needless to say, even though this was the dog formula, it was a hit with the cats too. I’ve finally gotten around to making the recipe and wanted to share it with you.
Here’s what you need to make the Egg Batter:
Here’s what you need for the Chicken and Barley:
Make sure both sides of the chicken is coated:
Here’s what you need to make the dressing:
- For Egg Batter
- 6 cloves garlic
- 2 tbsp fresh rosemary leaves
- 2 tsp kosher salt
- 3 tbsp brown rice flour
- 2 extra large eggs
- For Entree
- 2 Chicken Breasts
- 1 1/2 cups cooked barley
- 1/2 bunch fresh parsley
- 3 medium peeled carrots
- 3 tbsp olive oil
- For Tabbouleh Dressing
- 5 tbsp fresh olive oil
- 1/2 cup extra virgin olive oil
- 1/2 tsp Dijon mustard
- 1/4 tsp kosher salt
- fresh black pepper to taste
- Process garlic, rosemary and salt in a food processor until finely chopped. Add rice flour and eggs, process until smooth. Pour batter into a large bowl.
- Between two sheets of plastic wrap, pound two chicken breasts until they are a uniform 1/2 inch thick. Remove chicken from the plastic wrap and add to the batter, turning the chicken until it is coated. Let chicken sit in batter one hour to marinate.
- Cook 1/2 cup barley in 1 3/4 cups water until barley is tender. Process 1/2 bunch fresh barley and 3 medium peeled carrots in a food processor until finely chopped, but not pureed.
- For Tabbouleh Dressing:
- Blend dressing ingredients until emulsified. Combine dressing with barley, carrots and parsley. Taste to adjust seasonings.
- Heat 3 T olive oil in a saute pan on medium. Place the chicken in the pan and cook without moving for 15 minutes. Check to make sure the batter is not browning too quickly and adjust the heat. With a pancake turner, carefully flip the chicken and cook for another 15 minutes or until the internal temperature reaches 165 degrees F.
Since Okie was determined to have his portion of the Beyond Simply 9, here he is enjoying his portion. (Purina makes this for cats too!)
