Eggnog Icebox Pie Recipe

The Christmas season is my favorite time of year. Our family has so many traditions, from putting up the Christmas tree on Thanksgiving Day to making reindeer food on Christmas Eve. One of our favorite family traditions is baking. The kids and I spend hours in the kitchen preparing cookies and brownies, candy and fudge, and pies and cakes. We gift our food to friends, family, and neighbors who look forward to their goodies all year. People begin to message me during November to ask how soon they’ll get their treats.

I’ve been a fan of eggnog since I was given a recipe for Eggnog Punch shortly after I got married. I made it for a holiday party, and it was a hit. Later, my kids discovered the joys of eggnog and asked if we could use it in a recipe. We experimented with several different pie recipes before we created this rich, creamy Eggnog Icebox Pie. While this recipe does take a little time to make, it’s mostly chilling time. The pie itself comes together quickly, uses only a few ingredients, and is a hit with everyone who enjoys eggnog-and some folks that don’t too!

Eggnog Icebox Pie Recipe:

This pie is delicious but it’s definitely an occasional treat. This year, I adapted the recipe using Sweet’N Low® so everyone could enjoy it since Sweet’N Low® helps reduce sugar and calories when used for baking. Our holiday traditions have never been so sweet!

Eggnog Icebox Pie Recipe

A rich and creamy no-bake eggnog pie with a gluten-free option.
Ingredients
  • Crust:
  • 12 graham cracker sheets, crushed
  • 2 tablespoons butter, melted
  • 1 packet Sweet’N Low® or 1/5 teaspoon of Sweet’N Low® 8oz Bulk Box
  • Filling:
  • 1 (8 oz.) package cream cheese, softened
  • 2 teaspoons Sweet’N Low® 8oz Bulk Box or 10 Sweet’N Low® packets
  • 1 package (3 oz.) sugar-free cheesecake pudding mix
  • 1 3/4 cups Eggnog
  • ½ teaspoon rum extract (optional)
  • 1 chocolate bar square, grated (optional)
Instructions
  1. In a medium bowl, add graham crackers, butter, and Sweet’N Low®.
  2. Stir until the mixture is blended.
  3. Place mixture into a 9 in. pie pan. Spread the graham cracker mixture evenly across the bottom and up the sides of the pan. Set aside.
  4. Place softened cream cheese in a large bowl. Add the Sweet’N Low®. Blend, using a mixer, until mixture is creamy and no lumps remain. Set aside.
  5. In a large mixing bowl, add the eggnog and the pudding mix. Add the rum extract, if desired. Blend for three minutes or until the mixture is smooth.
  6. Add the cream cheese mixture to the eggnog mixture. Blend until the mixture is smooth and no lumps remain.
  7. Pour the eggnog filling into the prepared graham cracker crust. Wrap pie in aluminum foil and place in the refrigerator for 4 hours or overnight.
  8. Before serving, top the pie with the grated chocolate, if desired.

Tips and Trades for the Eggnog Icebox Pie:

*Want a gluten-free version? Substitute gluten-free graham crackers in the crust.
*You can use rum instead of rum extract if you want. Substitute 1 tablespoon for the rum extract.
*Don’t like chocolate? Sprinkle 1/8 teaspoon nutmeg over the top of the pie instead.
*In a hurry? Use a prepared graham cracker crust instead of making your own.
*This pie tastes even better after it sets. It can be made a day in advance and either wrapped tightly in foil or stored in an airtight container in the fridge.
*The pie will last four to five days in the fridge. If you want to freeze the pie, allow it to chill in the refrigerator for an hour. Then, wrap the entire pie tightly in several layers of aluminum foil before freezing. The pie will keep for up to 3 months. Allow the pie to thaw in the fridge before serving.
