“I’ve gained how much?” I questioned my doctor on a recent visit. I had actually gone to the doctor because I believed I had a hormone imbalance and had been steadily gaining weight. I explained my symptoms in great detail, generating a nod of agreement from my doctor. He informed me I should go to another one of my doctors for a hormone check and, in the meantime, eat a low carb diet. No amount of reasoning seemed to convince him I already ate a low carb diet. Finally, I gave up and decided to add more fiber to my diet until I could see the other doctor. I always keep a package of Fiber One bars in the pantry for my mid-afternoon slump, but I was craving something a little different. Enter new Fiber One Cheesecake bars in two flavors, Salted Caramel and Strawberry.
I’ll be honest, high fiber products don’t usually satisfy my dessert cravings. If I want a dessert I splurge on something I can split with my family. But, after the first bite of these Salted Caramel Fiber One Cheesecake bars, I’ve decided I might keep them all for myself. These bars are soft and chewy, with a smooth cream cheese flavor. The salted caramel adds just the right amount of sweetness to make them seem indulgent and decadent. Best of all, they have only 150 calories each and 20% (5 grams) of the recommended daily amount of fiber.
My son walked through the house as I was photographing the bars and asked if he could taste of the salted caramel flavor. He turned to me and said in amazement, “These are really good!” I have definitely found my snack of choice to keep in the car when I am on the go.
We also tried the Strawberry bars, and while tasty and with a nice fruit flavor, salted caramel was the hands down favorite. We picked up our boxes of Fiber One Cheesecake bars at Publix. (Remember, they double coupons in most areas!)
