Frosty Peach Shake

I was digging a baking dish out of my cabinet the other day when an old recipe book fell out at my feet. I didn’t recall ever seeing it before, but when I picked it up it and glanced through it, I realized it contained recipes from family and friends, many of whom are no longer around.  As I was reading through it, thinking, “Hey! I remember when we had this or that dish,” I came across a recipe for a “frosty peach shake.” It only had three ingredients and could still be worked into my diet plan.  I am not sure where the “shake” part came from, because it seems like it is more of a smoothie, but this recipe would also make some delicious freezer pops.

All you need is milk, instant vanilla pudding mix and peaches. The beauty of this recipe is how easy it is to substitute the ingredients for your taste buds. You can use any type of milk, from skim to whole, or substitute almond or soy milk.  I decided to use sugar free pudding mix, but you can use the full calorie pudding mix and substitute different flavors with different fruits.  When using the fruit, you can use fresh, sliced peaches, frozen unsweetened peaches, or a can of peaches in juice.

Pour the ingredients into a blender, mix until smooth and you have four “milkshakes.”  If you would prefer freezer pops, chop the peaches into small pieces, and add to well blended pudding and milk mixture. Spoon the pudding & piece mixture into small Dixie cups and insert a popsicle stick (or use a popsicle mold.)
mixing the ingredients

I can imagine all the combinations I could make; chocolate pudding with strawberries or bananas, vanilla pudding with mangoes or oranges.  I’m pretty sure I can come up with enough combinations to keep the kids (and me) refreshed all summer.
