Fruit and Yogurt Bars Recipe


What is it about the new year that makes me think I have a fresh new start?  I admit, I am not the type who begins each year with a list of resolutions, mainly because my resolutions were always impossible to obtain. Am I really going to go two months without eating something sweet? Am I really going to cut all soda from my diet? It’s doubtful. Instead I began to set goals.  I write all sorts of goals; blogging goals, household goals, travel goals, health goals, you name it, I probably have a goal for it. One of my goals this year is to get healthy again.  Last year was spent dealing with family illnesses.  Since I was never home we ate out a lot.  With all the time on the go my exercise routine went kaput.  This year my goal is to begin cooking better for us meals at home.  I also want to keep snacks on hand that taste good, snacks the kids will actually eat.  I found this with some smart lifestyle hacks using Yoplait Light yogurt, who is sponsoring today’s recipe, although I have eaten it for years!  Available in over 20 flavors, with only 90 calories per cup, this is my go to food when I want something light and creamy.

There are times when the kids and I still want something like an ice cream bar. To combat this craving, I decided to use Strawberry Yoplait Light Yogurt to make a smooth Fruit and Yogurt Bar.  I used strawberry yogurt, bananas and granola, but the possibilities are endless, just use your favorite flavor yogurt and the fruit of your choice.  To make six yogurt pops, you’ll need one cup of strawberry yogurt, one banana (sliced) and a tablespoon of granola.  I used gluten free granola so the entire family could enjoy it.

Simply mix the granola and the yogurt together and add banana slices to each freezer pop mold. I used about four to six slices per mold.  Add the granola and yogurt mixture to the molds and place in the freezer until done.  Let the molds soak for a minute in warm water for easier removal.
