Have you ever tried to get your kids hooked on veggies? It’s not always easy! My kids could pick out the smallest particles of veggies, ones I thought I had hidden. I tried everything I could think of; blending them into smoothies, pureeing them and adding them to casseroles and other dishes. I did everything I could think of except, like one mom I know, chopping up broccoli and hiding it in popsicles. That’s a line I refused to cross! Now throw food allergies into the mix. With the various diets in our family including no gluten, no dairy, no oats, no soy and no pears, it can seem like there’s not much left to cook.
Buying prepared snacks is also a chore. We have to check labels carefully to make sure there are no ingredients that might cause an allergic reaction. Finding one with hidden veggies? The kids think they are getting dessert but really they’re getting a chocolate muffin whose first two ingredients are zucchini and carrots. I challenged the kids to try one and guess the first ingredient. They didn’t believe me!

I have seen these Garden Lights in the store but I was not able to get some. This time I will. That muffin looks so good, who would know it had zucchini and carrots in it!
Garden Lites are so delicious! I’ve been hooked ever since trying a sample at Costco a few months back. Even hubby (who isn’t the healthiest eater) loved them!
