I love the holiday season, the sights, the smells, the gathering together with friends and family I rarely see. But there’s a downside to all of this; the hectic rushing to get everything done. It seems the more responsibilities I have, the less food is in our home. The kids complain freely about this, asking, “When are you going to the store, Mom? We have no food!” While this is a slight exaggeration, I’ve learned that stocking up in bulk on veggies and other foods, like Country Crock, from BJ’s is the way to go. (Do you know how much teenage boys can eat? Hint: A Lot!) This Garlic & Chive Mashed Potatoes recipe, sponsored by Lunchbox, is gluten free and enjoyed by the entire family.
I found the original recipe on the BJ’s Cooking Club Micro Site, which features some of the cutest recipes to make pancake elves and other goodies, as well as some super simple recipes from Hellman’s and Country Crock. Naturally, I took the basic recipe, added a few ingredients, and am ready to take my potatoes to any Christmas meal I attend. (I included the original recipe at the bottom of the post and gave a bunch of optional add-ins. These potatoes can be made several different ways to keep your family guessing which type of potatoes they will be served next.) Here’s all you need to make the recipe:
Begin by combining the chopped potatoes, Country Crock Spread, salt and pepper. Saute the garlic in a Tablespoon of Country Crock. Add the garlic and chives. Serve immediately.
- 3 medium red potatoes, cubed
- ¼ cup Country Crock® Spread
- ¼ cup milk
- ¼ tsp. salt
- 1 pinch ground black pepper
- For Garlic Chive Potatoes:
- 1 tablespoon garlic
- 1 tablespoon Country Crock
- 1/4 cup fresh chives, chopped
- 1/2 cup sour cream
- Other add ins:
- For Cheese Potatoes
- Add 1 cup sharp cheddar cheese
- For Cheesy Bacon Potatoes
- Add 1 cup sharp cheddar cheese
- and 1 cup crumbled bacon
- Cover potatoes with water in 2-quart saucepan.
- Bring to a boil over high heat.
- Reduce heat to low and simmer uncovered
- minutes or until potatoes are
- very tender; drain.
- Return potatoes to saucepan; mash.
- Add Country Crock Spread, salt and pepper. Mix well.
- Saute garlic in Country Crock Spread. Add garlic, milk, fresh chives and sour cream to the potatoes. Serve immediately.
