At our house one of the kids’ favorite desserts is called “stuff.” It’s really a low calorie mousse recipe, and it’s easy to make in any flavor we want. The kids ask me all the time, “Mom, what kind of stuff are we having for dessert?” We have all sorts of variations including peanut butter, chocolate, and one of my favorites, Raspberry Lemonade Mousse. With only three ingredients, or four if we make it into a pie, it is a simple gluten free dessert that can be made in five minutes or less. And, yes, I am all over quick and easy recipes that get me out of the kitchen in a hurry!
This recipe starts with a package of Crystal Light. I always have several flavors of Crystal Light in the cabinet because I am trying to drink more water. I’m not a fan of plain water and this encourages me to get in a few bottles a day! I’m working with Lunchbox to let you know about#CrystalLightWM Platinum Points, but I drink Crystal Light all the time anyway. Here’s what you need to make the mousse:
Mix the Crystal Light, whipped topping and cream cheese together in a large bowl. Spoon into individual serving dishes or, if you prefer, into a gluten free pie crust. I make a gluten free graham cracker crust, with sugar, gluten free graham crackers and butter.
Chill until serving. These can be topped with more whipped topping and a piece of fruit, if desired. You can substitute any flavor of Crystal Light to make endless variations of the mousse. The Raspberry Lemonade is perfect for summer parties.
- 1 package (6 ounces) cream cheese, softened
- 1 container (8 ounces) whipped topping
- 2 to 3 individual serving size packages Raspberry Lemonade Crystal Light (Depending on how strong you want the Lemonade taste) OR substitute your favorite flavor or Crystal Light
- pie crust, if desired
- Mix cream cheese, whipped topping and Crystal Light until blended. Pour into pie crust or individual serving bowls and chill until serving.

I make a to-die-for homemade chocolate mousse but have never had fruit flavored mousse. It sounds good though. Would probably make a tasty fruit dip also.
