May is Celiac Awareness month and the perfect time to answer all the questions I have received about Gluten Free recipes. First and foremost, Celiac disease is a disease that produces an immune response in the small intestine when gluten, a protein found in wheat, barley and rye, is consumed. In simple terms, people with Celiac have a difficult time digesting foods containing gluten. Over time this causes damage to the intestine, lack of absorption of vital nutrients, stomach pain, weight loss, bloating and sometimes diarrhea. Eventually the disease will cause all areas of the body to be deprived of nourishment. Coming to terms with this disease has been hard for my daughter and the entire family. I have to carefully read labels to be sure not even a trace of wheat is included in any products I purchase. I am always looking for simple recipes to try, which is why I was thrilled to receive a copy of the Sugar Free Gluten Free Baking & Desserts Cookbook by Kelly E Keough. I was able to whip up this Gluten Free Applesauce & Almond Crumble Recipe in less than five minutes. It’s a tasty snack for the kids they actually enjoyed.
You only need four ingredients!
To Make one serving:
1/2 cup (4 ounces) unsweetened applesauce
1/2 teaspoon cinnamon
1 teaspoon agave syrup
1 Tablespoon Almond meal
Simply mix the applesauce, cinnamon and agave together and top with almond meal. (Helpful hint: I did not have almond meal available so I toasted a cup of almonds for five minutes in a 350 degree oven. Once they cooled, I placed them in the food processor and blended them until they were the consistency of almond meal.)
This cookbook is great for someone who suffers from multiple food allergies and needs everything cooked from scratch. I, the person who likes recipes with only five ingredients, did find the cookbook a little daunting. Some of the ingredients could only be purchased in local speciality stores (think xanthan gum) and the cost of speciality ingredients can add up quickly. There are plenty of recipes that sound delicious. I plan to prepare them using substitutions, like gluten free baking mix instead of several flours.

Sounds yummy. I use agave instead of sugar for a lot of things. I have not every tried adding a crumb mixture on applesauce but great idea!

I have never had almond meal, this would be a great way to try it out. I would probably just do the toasted and blended almonds like you did though – only because I keep almonds on hand.

agave syrup is something I’ve seen poping up in recipes lately I haven’t been brave enough to try it yet. Almond meal I never knew such a thing existed.
Naturally all applesauce should be gluten free! Sadly so e companies add the weirdest ingredients to their foods.
