Gluten Free Banana Caramel Pancakes Recipe

Did you know February is National Breakfast Month? Me either, until a couple of weeks ago.  What better way to celebrate National Breakfast Month than with a serving of CopyCat  Banana Caramel pancakes from the restaurant whose name starts with an I and ends with a P.  There was a slight hitch in our pancake plans.  I am not a morning person. Sure, I’d love to have pancakes if someone served them to me, otherwise I spend my morning gulping massive amounts of caffeine and wondering why I am awake.  I decided our pancakes would be perfect for “breakfast for dinner” and the kids seconded my plans. My daughter, who has been diagnosed with Celiac, asked if she would be able to participate in our Breakfast/Dinner plans.  Thanks to the new line of Krusteaz Gluten Free products, yes, she could.

I used the Krusteaz Gluten Free pancake mix, prepared as directed on the package, as a basis for our pancake creation. The rest of the recipe was simple, preparing a packaged banana cream pudding mix, slicing bananas and adding a drizzle of caramel.  One important tip to remember: Gluten Free pancake batter cooks a little differently than regular batter.  You’ll need to allow these to cook a little longer before flipping and make them thinner than normal pancakes so they will not fall apart.
Banana Caramel Pancakes

Here’s all you will need to make them:

Begin by making the pancake mix as directed on the package.  Slice the bananas and make the pudding mix (I used sugar free), Set aside. Cook the pancake and place on a plate. Top with 1/4 cup banana pudding mixture and sliced bananas.

Gluten Free Banana Caramel Pancakes Recipe & Giveaway
Ingredients
  • 1 box Krusteaz gluten free pancake mix, prepared as directed on package
  • 1 box banana cream pudding mix (can use sugar free)
  • 2 cups milk
  • 1/2 cup caramel ice cream topping
  • 3 bananas, sliced
  • whipped cream, if desired
Instructions
  1. Prepare pancakes as usual. Meanwhile, make pudding mix by mixing pudding mixture with the two cups of milk. Set aside. Slice bananas.
  2. To prepare Place one pancake on a plate. Top with 1.4 cup pudding mixture. Top the pudding with sliced bananas. Place another pancake on top of the pudding mixture. Drizzle with caramel ice cream topping. If desired, add a spoon of whipped topping and additional banana slices for garnish.

  125. I love the GF Krusteez. That’s what we use for the kiddo. Banana caramel sounds like it could be heavy in the gut though. Do they bake up light and fluffy?

    • For gluten free pancakes they bake up lighter and fluffier than most. They’re not as light and fluffy as regular pancakes though.
