One of my daughter’s favorite memories with my mom is making peanut butter cookies together. No matter what my mom was doing, she would stop and whip up a batch of these cookies. I didn’t realize–even though my mom made them for me as a child–they are also gluten free, so my daughter can still eat these. This recipe is so simple–only four ingredients–and can be adapted by using whatever type of peanut butter you prefer, crunchy, plain or flavored with chocolate. One tip with these cookies– only allow them to stay in the oven until they are slightly brown, but still soft. If you let them stay in the oven until they are brown on top they will be burned on the bottom and turn out to be very hard. There’s nothing like waiting anxiously for a delicious warm cookie and then realizing you can’t eat them, although the little critters who visit our back yard are always appreciative of the mishaps.
- 1 cup (8 ounces) sugar
- 1 cup (8 ounces) peanut butter (I used chocolate peanut butter to make the chocolate peanut butter cookies)
- 1 egg
- 1 teaspoon vanilla
- Preheat oven to 350 degrees. Place all ingredients in a bowl and beat with a mixer until combined. Roll the dough into twelve balls. Place the cookie dough balls on an ungreased baking sheet. Using a fork make a criss cross pattern on each cookie to flatten them. Bake five to eight minutes or until lightly brown but still soft. Let cool and remove from pan. This recipe makes one dozen (12) cookies.

Gluten free peanut butter cookies sound delicious. I really like the idea of being able to enjoy some of my favorite flavors and ingredients in a gluten free form.

Yes, you could substitute Nutella. It would be delicious I am sure. I think the Chocolate Peanut butter I used is pretty much the same.

I guess I could use sugar substitute for this one—Nothing like the taste of real sugar however-diabetics can’t be choosey–This really sounds like a cookie I would enjoy. And the fact that you can now buy peanut butter and chocolate together in one jar makes this one a no brainer!
