Gluten Free Peanut Butter Fudge Recipe

My son is going off to college this fall to study for his degree in Culinology. (Yay! That means he can cook for me!) When he asked if he could prepare recipes this summer, appropriately entitled “the summer of sweets” as he wants to be a pastry chef,  and asked if he could publish the recipes on my blog,  I told him, “Sure.” What else would I say to someone who wants to cook me sweets? His first foray into his summer of sweets was met with much discussion and poring through cookbooks.  “What about this recipe, mom? Should I make this one?” Finally, he decided to attempt peanut butter fudge because it was gluten free and everyone in the family could eat it; except my daughter who recently got diagnosed with a bunch of new food allergies.  The results were tasty.  The only problem with this recipe is the cooling time, which meant we had to wait to sample it.

I’ve  also included a few tips to make this recipe easier.  Begin by mixing sugar, milk, peanut butter and corn syrup in a saucepan and cook until boiling.  The mixture needs to be stirred constantly to allow the sugar to dissolve. It will take about five minutes.  Be sure to use a wooden spoon, plastic will melt into the fudge and no one wants that.

Clip a candy thermometer onto the side of the pan and cook over medium low heat until the temperature reaches 234 degrees, stirring frequently.  This should take 8 to 10 minutes.

Remove pan from heat and add butter and vanilla. DO NOT STIR.  Allow the mixture to cool, without stirring, until the temperature reaches 110 degrees. This will take about 55 minutes. Beat the fudge until the mixture begins to thicken.

Add nuts and continue beating until very thick. The total beating time should be around six or seven minutes. Pour fudge into a 9″ by 3″ pan that has been lined with buttered foil. Allow to cool until firm. Cut into squares and enjoy.

Gluten Free Peanut Butter Fudge Recipe
Ingredients
  • 2 cups sugar
  • 1/2 cup milk
  • 1/2 cup creamy peanut butter
  • 2 tablespoons light corn syrup
  • 2 tablespoons butter (or margarine)
  • 1 teaspoon vanilla
  • 1/2 cup chopped peanuts
Instructions
  1. Line a 9″ by 3″ pan with foil and butter the foil. In a saucepan, combine sugar, milk, peanut butter and corn syrup. Cook over medium high heat until boiling, stirring constantly to dissolve the sugar.
  2. Cook over medium low hear, stirring frequently, until a candy thermometer reads 234. Remove pan from heat, add butter and vanilla. DO NOT STIR. Allow to cool to 110 degree.
  3. Beat until mixture begins to thicken, add nuts. Continue to beat until mixture is very thick and glossy. Pour fudge into prepared pan. Allow fudge to become firm, cut into pieces.
