Gluten Free Rosemary Garlic Cheddar Biscuits

Thanksgiving at my house is a hectic time of year. I spend days cleaning my house to make sure it is mother-in-law clean while still preparing a dinner for twenty. When my daughter was diagnosed with Celiac, my life became more difficult. Some of the family favorites were our stacks of rolls and our stuffing, both of which contain tons of gluten. I had to come up with a substitution that would pass our family taste test and do it quickly! I found a recipe for light and fluffy biscuits, I adapted it using 7UP TEN to add some flavor and made it into a gluten free recipe.
I picked up some TEN products at Kroger along with some other supplies and developed Rosemary Garlic Cheddar Biscuits, a combination that goes perfectly with turkey or ham. Did I mention this recipe only takes a few minutes to mix up and bake, leaving plenty of time for the more time consuming dishes? Yes, I love quick and easy!

Here’s what you need to make it:
Ingredients for Rosemary Garlic Cheddar Biscuits

Mix the gluten free baking mix, cheese, onions and rosemary together. Add the 7UP TEN and stir just until blended.

Drop the mixture by tablespoons onto a greased baking sheet.

Brush with the butter and garlic mixture.

I think these taste best when served warm so I keep them on a warming tray until ready to serve. With some of the extra 7UP TEN, I whipped up a tasty two ingredient drink for the kids. I mixed ¼ cup slightly thawed frozen strawberries and 1 cup 7UP TEN together, stirred it and served. The kids loved it! You could also substitute Canada Dry TEN for a slightly different flavor combination.

On Thanksgiving evening we always go to the Christmas Tree Farm, chop down a tree and bring it home to decorate. One of our traditions is munching on cookies and enjoying  a DrPepper TEN or A&W TEN float made  with 1 scoop vanilla ice cream and 12 ounces of soda. It saves calories and still gives us a tasty treat!

Rosemary Garlic Cheddar Biscuits
Ingredients
  • • 1½ cup Gluten Free Baking Mix
  • • ½ cup 7UP Ten
  • • ½ cup grated sharp cheddar Cheese (sometimes I use a cup if I want more cheese flavor)
  • • 4 green onions, diced (white parts only)
  • • 2 teaspoons fresh chopped rosemary
  • • ¼ cup butter, melted
  • • 1 tsp garlic powder
  • • ¼ tsp salt
Instructions
  1. • In a medium bowl, combine the biscuit mix, 7UP TEN, cheddar cheese, onions and rosemary just until blended . Do not over mix.
  2. • Drop dough by the spoonful onto greased baking sheet.. Bake at 350 degrees for 10 minutes or until biscuits start to brown.
  3. • Combine the butter, garlic, and salt together.
  4. • Remove the biscuits from the oven & brush them with the garlic butter mixture.

  6. I made 7 up biscuits a long time ago when I used to be in Weight Watchers. We learned to use diet pop around 2000 in baking to cut calories and fat. But mine were not cheddar ones. These remind me of Red Lobster. YUM!
