Gluten Free Samoa Truffles Recipe

I’ve been a fan of Girl Scout Samoa Cookies since I was a kid. Every year I purchase a box and try to make them last and last.  When Brittany was diagnosed with celiac,  she missed having her yearly Samoas. Then we found a Samoa truffles recipe and adapted it to make a gluten free version.  These are so good! The rich chocolate coating, the creamy caramel filling, I could go on and on.  We like to serve these chilled, but they’re just as good at room temperature. As an added bonus, they’re easy to make, with only six ingredients, and have a short prep time.

Gluten Free Samoa Truffles Recipe 

Ingredients:
You’ll need the following:
Powdered sugar
Dulce de Leche
Shredded coconut
Gluten Free Shortbread Cookies (if you’re not gluten free, you can use regular shortbread cookies for a regular version)
Cream Cheese
Chocolate Candy Coating

Directions:
Step 1: Crush the shortbread cookies.  I usually put the cookies into the blender for about 15 seconds.  Set aside.
Step 2: Toast the coconut. To do this, spread the coconut evenly on a baking sheet and bake for 10 to 15 minutes at 350. Be sure to stir the coconut every five minutes, to prevent burning.
Step 3: Combine softened cream cheese, powdered sugar and Dulce de Leche. Mix until blended.
Step 4: Add shortbread cookies and coconut, mix until blended.
Step 5: Scoop mixture by teaspoons onto a sheet of waxed paper. Chill until firm.
Step 6: Melt chocolate melts or bark in microwave for 90 seconds. Stir. If mixture is not melted, return to microwave for 30 to 45 more seconds.
Step 7: Dip chilled candy into chocolate. Place on waxed paper and return to freezer until chocolate is hardened (usually about 5 minutes)

Tip:  You can find canned Dulce de Leche in either the baking goods section near the condensed milk or in the Hispanic section.  If you can’t find canned Dulce de Leche, you can substitute caramel. I use a jar of caramel ice cream topping in a pinch.
