Gluten Free Scalloped Ham and Mac Casserole Recipe

The one food I could always count on my kids and their picky friends eating was macaroni and cheese. I kept a box in the pantry at all times for days I was rushed. It made a great base for casseroles and one pot meals. Plus, who ever turned down a side of macaroni and cheese? No one, that’s who. When my daughter was diagnosed with Celiac, my quick dinners and sides with my box of macaroni and cheese were over. My first thought on finding out she was gluten free, “Seriously? There goes all my easy dinners! So. Not. Cool. ” You can imagine my delight when I discovered Horizon Organic Gluten Free Macaroni and Cheese. I can’t stress enough how happy I am to have easy meals back on my menu!

Gluten Free Scalloped Ham & Mac

One dish I’ve made often over the years is an old family recipe, Scalloped Ham and Cheese. My aunts and grandmother made the dish from scratch, but I am all about shortcuts. You can change this dish to your tastes with different add-ins. I like to add water chestnuts and green pepper, but since part of the family spend time picking these ingredients back out, I’ve learned just to add them in my portion. Begin by making the Horizon Gluten Free Macaroni and Cheese as directed on the package.

While this is cooking, saute one small onion. Immediately add chopped ham to the onion mixture and stir into the prepared macaroni and cheese. Voila! Easy one pot meal. Another favorite way to serve the dish is to eliminate the onion, and add a small can of crushed, drained pineapple to the mixture. I know it sounds weird, but it tastes good and sneaks some fruit into their diet.

Scalloped Ham and Cheese Casserole
Recipe Type: Gluten Free
Ingredients
  • 1 box Horizon Gluten Free Macaroni and Cheese, prepared as directed on package
  • 1 tablespoon butter
  • 3/4 cup onion, chopped
  • 1 cup ham, cubed
  • Add or Substitute and of these Variations:
  • 1 cup mushrooms, sliced
  • 1/2 cup water chestnuts, sliced
  • 3/4 cup bell pepper, chopped
  • 3/4 cup crushed pineapple, drained
Instructions
  1. Prepare Macaroni and Cheese as directed on the package. Meanwhile, saute onion in butter. When onion is done, add chopped ham and stir. Add ham and onion mixture to the macaroni and cheese. Stir and serve immediately.

  2. We’re not big on ham in our household but we do love Mac & Cheese. I have never seen this brand before though. I’ll have to look for it since my 10yr old is supposed to be eating gluten free products.

    That is great that the macaroni is gluten free. There are so many GF products out now, which is a big help to those of us trying to eliminate gluten from our diets.
