Gluten Free Spooky Ghost Cake

Each year on Halloween I pack up the kids and spend the evening at a friend’s house. When the kids’ were younger, we would walk around the neighborhood and Trick-or-Treat. As the kids’ got older, they elected to sit on the porch and give candy to the hundreds of children passing through the neighborhood. But one thing remains a yearly tradition; a spooky dinner before the festivities. We serve simple fare like hot dogs and chips or pizza and bread sticks for the main meal, but we always go all out to make a spooky dessert. This year I’m making this Spooky Gluten Free Ghost Cake.  It starts with a packaged mix and uses gluten free chocolate sandwich cookies as decor so it doesn’t take long to make. Of course, if you are not gluten free, it’s easy to make this cake with regular ingredients. Either way, it looks great and no one will believe you didn’t spend hours making it.

Begin by making a gluten free cake mix as directed on the package or jazz it up a bit with my Basic Gluten Free Cupcake recipe that shows how to dress up a gluten free cake mix so it has a “from scratch” taste. Important Tip: Allow the cake to cook completely before adding the icing or it will melt.

Place one layer of cake onto a cake plate and spread whipped icing onto the cake.  Sprinkle 1/2 cup crushed chocolate sandwich cookies onto icing, if desired.  You can purchase the whipped frosting or use my Buttercream frosting recipe.

Place the second layer of cake on top of the bottom layer and completely frost the cake, making sides and top as smooth as possible. Gently break apart the chocolate sandwich cookies, making sure the white filling is left on one side. Press these gently into the sides and top of cake.

Gently press a brown chocolate candy, like M&M’s or Reese’s Pieces, onto each chocolate sandwich cookie. Add additional candy pieces to the cake or add candy eyeballs to different sections of the cake. Voila! It’s so easy to make that the kids can help. What are you planning to make for Halloween?
