I am constantly on the hunt for new dishes to serve my family. When I received a bottle of William Wolf Pecan Bourbon, the entire crew was happy to give suggestions ranging from Bourbon Pecan Pie for Thanksgiving, Bourbon Balls for Christmas and a list of desserts longer than I could shake a stick at. I listened to all their ideas and decided, “I want chicken.” I found a Bourbon Pecan Chicken recipe that looked good, but I had two problems. I only had walnuts, not pecans, and didn’t want to go to the store and I wanted it to be gluten free so my daughter could eat it too. Thus, my version of Gluten Free Walnut bourbon chicken was born. The original recipe called for frying both sides of the chicken, but I skipped that step and baked it instead. And they say people in the South fry everything!
Here’s what you need to make it.
Dip both sides of the chicken in the beaten egg, then roll the chicken in the bread crumb mixture. Place the breaded chicken in a single layer in a 9″ by 13″ pan.
Mix the ingredients for the sauce along with the bourbon in a medium sized sauce pan. Bring the mixture to a boil and then turn down to simmer. Simmer, stirring constantly, until mixture is thick.
Pour the Bourbon Sauce over the breaded chicken mixture. Bake at 350 degrees until done, approximately 30 minutes.
Here’s the finished product. Looks good, huh? It was a huge hit at our house.
- 1/2 cup finely chopped walnuts
- 1 cup bread crumbs ( I made my own from Gluten Free Bread) or use 1 cup Almond Flour
- 1 egg
- 6 skinless, boneless chicken breast halves
- 1/4 cup Dijon mustard
- 1/2 cup brown sugar
- 3 tablespoons bourbon whiskey
- 3 tablespoons soy sauce
- 1/2 cup unsalted butter,
- 1 small onion, minced
- Mix egg. Dip chicken on both sides in egg and then in bread crumbs. Place in a 13 by 9 inch baking dish. Set aside. Mix mustard, brown sugar, whiskey, soy sauce, better and onion in a medium saucepan. Allow to come to a boil and then reduce heat to simmer. Stir constantly until mixture becomes thick. Pour Bourbon Mixture over chicken breasts. Place the chicken breasts in a 350 degree oven and bake until done, about 25 to 30 minutes. Remove from heat and serve over pasta or rice.
What is your favorite chicken dish?
I browned the drumsticks in vegetable oil first and set them aside until the last ten minutes of the simmer stage. No bad odor and no scum to skim. Very tender and not too sweet. I added extra garlic, used that rooster hot chile sauce, and topped with toasted sesame seeds and some green onions. I served with white rice and some garlicky broccoli. I will make this again. I made this once before and was not happy with the texture of the chicken or skin, but loved the flavor. Below are my changes. Make sauce and set aside 3/4 cup. Marinate the chicken thighs or legs overnight in the remaining sauce. Roast seasoned uncovered thighs or legs in 450* oven for 40 minutes, or until done throw away “dirty” marinade. Bring 3/4 cup “clean” or remaining marinade to boil and reduce by 1/2. When done the skin gets a beautiful deep brown color and is crunchy. The texture of the chicken is perfect
