Since my daughter was diagnosed with Celiac we have had our share of gluten free goodies and flat out failures. This causes some members of my family to regard gluten free items suspiciously. My son flat out asks, “What are you making for dinner? Is it going to be gluten free?” Informed we were going to have gluten free pancakes for dinner, he eyed them and said, “What do you plan to do with them?” “I think you’ll like them,” I responded, “I’m trying something new; a gluten free Caramel Apple Pancake Recipe.” He agreed to reserve judgement and we were ready to cook.
I didn’t want to mix several flours to make the mix, so I started with a box of prepackaged Nicole’s Naturals Gluten Free Waffle & Pancake Mix. It already had spices added into the mix. I could smell the cinnamon as I opened the package! I mixed in some extra goodies when I stirred the mixture together and fried the pancakes as I would normally.
When the pancakes were done, I added one pancake to a plate. I spread 1/4 cup of apple pie filling on the pancake and topped with another pancake. I placed another 1/4 of a cup apple pie filling on top of this pancake. Then I drizzled it with salted caramel ice cream topping. I presented it to my son, who looked at me in surprise and said, “These pancakes are good. I like this mix.”
- 1 box Nicole’s Gluten Free Waffle & Pancake Mix
- 4 tablespoons butter, melted
- 1 egg
- 1 cup sour cream
- 1/4 cup milk
- 1 can (21 ounces) Apple Pie Filling
- 1 cup salted caramel ice cream topping
- Stir together pancake mix, butter, egg, sour cream and milk. Make pancakes as usual. Place one pancake on plate. Top with 1/4 cup apple pie filling. Add another pancake on top of the first. Place one fourth cup apple pie filling on top. Drizzle with salted caramel ice cream topping.
I’ve been experimenting using the mix with different mix-ins and so far they’ve all been a hit. We’ve tried peanut butter and chocolate. Next on the list is jelly doughnut! While I wouldn’t recommend this recipe for everyday breakfast, it’s great as a special treat. Pancakes using Nicole’s Naturals Gluten Free Waffle & Pancake mix, however, are now on our go to morning breakfast meal.
