Gluten Free Caramel Brownie Cheesecake Recipe

My brownie trifle is, hands down, my most requested recipe. I don’t even remember where I found the recipe, but it’s been a family favorite for years. My nieces and nephew request it for their birthday and fuss if I don’t serve it on Christmas and Thanksgiving. When my daughter discovered she had Celiac, she asked, “How am I supposed to eat Brownie Trifle at Thanksgiving and Christmas dinner?” I had no answer for her, but promised I would research. I did learn how to make gluten free brownies, but the recipe called for expensive ingredients I didn’t keep stocked in my kitchen. Thankfully, Krusteaz has developed a new gluten free line of mixes, including brownies, cornbread, pancake mix and blueberry muffin mix. When I was asked to participate in the Krusteaz Gluten Free Recipe contest, my first thought was, “Brownie Trifle!” Then I decided, No, let’s try something new to celebrate my daughter’s ability to eat some of her favorite foods again. We like brownies and we like cheesecake, so naturally I decided to make a Caramel Chocolate Chip Brownie Cheesecake. No one can go wrong with caramel, brownies and more chocolate. Just saying.
Gluten Free Caramel Brownie Cheesecake

Here’s what you need to make it, starting with the brownie layer.  Mix the brownie layer as directed on the package and then bake for 15 minutes or until set.  It is important not to bake it until completely done, because it will be baked again with the cheesecake layer.

Next, you’ll need the following ingredients.  Mix the cream cheese, sugar, vanilla and eggs together until blended. If you test taste it and decide it doesn’t have enough sugar, don’t be tempted to add more! It will be very sweet when the chocolate and caramel are added.
Ingredients

Add the chocolate chips and the caramel chips to the mixture.  Spread the cream cheese mixture over the brownie mixture and pop it into the oven.
Remove the cheesecake from the oven and allow to cool. Once it is cool,  slice and drizzle with melted caramel and chocolate if desired.  Store the cheesecake in the fridge.

Gluten Free Caramel Brownie Cheesecake Recipe
Ingredients
  • 1 package Krusteaz gluten free brownie mix
  • 1 egg
  • 1/2 cup each oil and water
  • 2 packages (8 ounce each) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/2 cup chocolate chips
  • 1 cup caramel chips
  • Optional topping:
  • 1/2 cup each Chocolate chips and caramel chips
  • 4 tablespoons cream
  • 1 cup chocolate fudge topping
Instructions
  1. Prepare brownies as directed, using the egg, water & oil. Bake for 15 minutes; set aside. Mix cream cheese, eggs, sugar and vanilla until blended. Stir in caramel chips and chocolate chips. Bake 20 to 25 minutes or until set. Allow to cool. Slice and top with chocolate and caramel if desired. To make chocolate, melt chocolate with 2 tablespoons cream in the microwave for one minute. Stir and drizzle over cake. Repeat the steps to make the caramel.
