“Do all gluten free foods taste bad? I tried something Gluten Free once and didn’t like it.” Since my daughter was diagnosed with Celiac and had to switch to a gluten free diet, I’ve been asked this question a lot. That’s why I was excited to attend the Gluten Free for Less event at Walmart, where companies provided samples of gluten free goodies and passed out pamphlets on the symptoms of Celiac. We also found a new to us product, Van’s Peanut Butter and Jelly Bars, available in blueberry and strawberry flavor. I grabbed a box and informed my daughter we would be using some of them to make gluten free peanut butter and jelly parfaits.
Parfaits are a quick and easy snack or a speedy breakfast when we’re on the go. As with any of my recipes, this parfait doesn’t take a lot of ingredients, tastes good and can be made quickly. I prepared four of them in five minutes.
All you need is vanilla yogurt, fresh blueberries and 4 Van’s PB&J bars. I started with parfait glasses and added 1/4 cup of yogurt to each glass. I topped these with two teaspoons of fresh blueberries and a couple of teaspoons of crumbled PB&J bar.
I covered the crumbled bars with another 1/4 cup of yogurt, sprinkled on a smidgen of crumbled bars and a few more fresh blueberries. These were a hit. The kids kept trying to sneak bites before I finished them! Van’s also make a PB&J bar with strawberry jam. To make a parfait with it, simply substitute fresh sliced strawberries for the blueberries. There’s all sorts of variations if you want to get a little crazy. Add different flavors of yogurt, mix the fresh fruit into a tiny bit of jam, personalize the parfait any way you want!
- 2 cups vanilla yogurt
- 1/2 cup fresh blueberries
- 4 Vans Blueberry PB&J bars, crumbled.
- Add 1/4 cup vanilla yogurt to four parfait glasses. Top with two teaspoons berries and 2 teaspoons crumbled PB&J bars. Cover this mixture with 1/4 cup yogurt. Sprinkle fresh blueberries and crumbled bars on top.

My 10 year old I recently found out isn’t supposed to eat gluten so I’ve been on the hunt to find more gluten free recipes. Thank you, he would just love this.

I was picturing this all kinds of wrong from the title. I was pleasantly surprised it wasn’t how I pictured it.
That looks so yummy! What a great event, too, with so many people restricting or avoiding gluten. We restrict it … .thankfully do not have to cut it completely. But it’s great there are so many gluten free products available now to help make it easier for people who do have to.
I’m ops till on the should I give up gluten fence. I should try it and see if it changes how I feel. Looks like s yummy recipe!

You had me at Peanut butter! I’m not really a fan of vanilla anything, but if it’s mixed with peanut butter and/or berries, it’s all that more appetizing!
