Gourmet Smores Parfait

Summer is my favorite time of the year to entertain. The weather is perfect to spend outdoor evening in the shade and there’s less cleanup after everyone goes home.  Most of my gatherings have children and adults, so I need something that is both a kid pleaser for those picky eaters and upscale enough for the adults. This Smores parfait fit the bill perfectly. Not only does it look impressive, it only has five ingredients!  You can top it with whipped cream, a piece of candy and some Biscoff cookie sprinkles, but (Warning!) whipped cream melts very quickly in the heat.  While I have not tried this, I think this could easily be made into an adults only version by adding a little Bailey’s Irish Cream or Kahlua.

Here’s what you need to make it:
Smores ingredients

Here’s how to make it: (serves four) 
Crush 12 Biscoff cookies.  Spread the mixture evenly between four parfait glasses, reserving 1 tablespoon crumbs for topping, if desired.  Prepare Dr. Oetker Dark Chocolate Truffle Mousse by adding one cup of milk and beating with a mixer for five minutes. Spoon 4 tablespoons mousse in to each glass.  Break one World Market Smores Milk Chocolate  candy bar into squares. Chop two squares candy for each dish. Layer on top of mousse mixture. Add one tablespoon Marshmallow Fluff to the glass. Repeat the chocolate and mousse layers. Top with whipped cream, reserved Biscoff cookie crumbs and one chocolate square if desired.
Cherry Slush

While I’m entertaining I am always surrounded by thirsty kids who think they should be treated to slushies  whenever an ice cream truck drives by. To combat this, I made up this three ingredient slushy that is good enough the adults ask for it too.  Did I mention only three ingredients? It’s so simple the kids can mix it up by themselves!
You will need (to serve four:)
1 (12 ounce) bottle Lemmy Lemonade
32 ounces Lemon Lime Soda
1 cup (8 ounces) Torini Cherry Lime Syrup

To make the Slush: Pour the 12 ounce bottle of Lemmy Lemonade into a freezer bag. Place in the freezer and freeze until solid. Remove from freezer and break into four equal parts. I used a hammer to chop up my lemonade. Place the four parts of frozen lemonade into four glasses.  Add two ounces (1/4 cup) of Syrup into each glass. Pour 8 ounces (1 cup) lemon lime soda into each glass. Stir and serve immediately.  (To show how much we like this, I am making a batch to serve at my daughter’s wedding tomorrow.)
