Grilled Pepper, Steak and Potato Salad

Grilled Potato Salad

I am a salad kind of gal as is my daughter. This is in direct contrast to the men in the family who think meat is a must at every meal.  They might not have meat at every meal, but it is certainly not from a lack of trying!  My son has been know to say, on more than one occasion, “I don’t care what we have for dinner as long as it is not a salad!”  Reaching a compromise is tricky so when I found this grilled pepper, steak and potato salad recipe I knew everyone would be happy.  By adjusting the amount of steak placed on top of the salad or reducing the amount of salad on the plate, everyone is able to get what they want.  It’s a total win-win and reduces a lot of complaining in my kitchen!  Even better, most of the ingredients are grilled.  Yes!  I’m able to send one of the guys in the family out with a plate of meat and veggies and let them do most of the work.  You can bet I never say no to having someone else cook for me! And, since it is gluten free, everyone in the family can enjoy it! 

Here’s what you need to make the recipe:

I placed the onion and potatoes in foil packets and allowed them to cook on the grill while I roasted the peppers on the grill and cooked the steak.  I’ve found, when grilling with Kingsford Charcoal, to be sure to prepare the coals as directed on the package. It will make the process go much faster!  Also, when  grabbing my meat from Walmart, I sometimes pick up an extra package of steak, season and grill it , slice it thinly and place it in the freezer.  When I know I’m going to have a busy day, I place a bag in the freezer to thaw and have it for emergencies.
Grilled Pepper Salad recipe

Begin by chopping the potatoes, onions and pepper.  Wrap the potatoes, onions and pepper in foil and place on the grill. While these are cooking, grill the steak to your desired degree  of wellness. ( I usually chop the steak into strips before grilling and add some salt free steak seasoning.

Mix the vinegar, olive oil, oregano, cilantro  and black pepper  together and add to the potato, pepper  and onion mixture. Stir well to combine.  Top with steak and sprinkle with cheese. Yum!

Grilled Pepper, Steak and Potato Salad
Ingredients
  • 1 large bell pepper, sliced into strips (or peppers of your choice)
  • 4 medium (about 1 pound total) potatoes of your choice, cut into cubes
  • salt to taste
  • 1/3 cup olive oil
  • 1 medium onion, sliced thin
  • 3 tablespoons vinegar, use a mild variety, like rice vinegar
  • 1 tablespoon fresh oregano or 1 teaspoon dried oregano,
  • 1/2 teaspoon ground black pepper
  • 8 ounces steak of your choice, seasoned however you wish. (I use a salt free steak seasoning)
  • 1/2 cup chopped cilantro OR parsley (I use whatever is available in my herb garden at the time)
  • 4 cups lettuce of your choice, chopped
Instructions
  1. Wrap potatoes, peppers and onions in foil/ Sprinkle with salt and pepper and place onto grill.
  2. When potatoes, peppers & onions are done, add vinegar, oregano, cilantro and black pepper. Stir well to combine.
  3. Place the steak on the grill and cook to desired doneness. Allow to rest for 5 minutes, then slice thinly. Arrange the salad leaves on a platter or individual plates, then top with the warm potato mixture and then the steak. Drizzle any dressing in the bottom of the potato bowl and serve immediately.
