Hawaiian Chicken Recipe

My kids and husband think the only meat I bring into the house is chicken. They have a running joke that any meat they bring into the house will magically turn into chicken if they give it to me to prepare.  I’m okay with that.  Everyone else in my family? Not so much.  I’m constantly looking for new chicken recipes to keep them from complaining.  Keep in mind, I like easy recipes. Sure, I can make a complicated meal but who has time to spend hours in the kitchen each day? When I found this Hawaiian Chicken recipe, I knew I had a winner.  It only has five ingredients besides the chicken and has a hands-on prep time of around ten minutes.

Hawaiian Chicken Recipe

One of the things I love about this recipe is that it can be grilled. Grilling is an (almost) year-round activity at our house. If I can find someone to shoo outside and man the grill, I’ll have them out the door so fast it will leave their head spinning. I can mix up the chicken, store it in the fridge to marinate and prepare salads and side dishes while I wait for it be done. This is a naturally gluten free and dairy free recipe so its perfect for when you have family members with allergies drop by.

Here’s what you’ll need:

4 to 5 boneless and skinless chicken breasts
2 tablespoons brown sugar
1 tablespoon lemon juice
1 (15.25 ounce) can crushed pineapple
2 tablespoons orange marmalade
1/2 teaspoon Worcestershire sauce

How to make it

1. In a medium bowl, mix brown sugar, lemon juice, crushed pineapple, orange marmalade and Worcestershire sauce.
2. Divide mixture evenly and pour pineapple mixture into two (1 gallon) freezer bags.
3. Add 2 to 3 chicken breasts into each bag. Seal bag, making sure sauce covers chicken breasts.
4. Refrigerate the chicken for two hours.
5. Remove the chicken from the marinade. Discard marinade.
6. Cook on high heat on the grill for 5 to 6 minutes. Turn chicken.
7. Cook for 5 to 6 minutes longer or until chicken is done.

Cooking Tips

*This chicken needs to marinate for 2 hours before using, but you can prepare it up to 24 hours ahead.
*You can substitute other portions of the chicken, including legs and thighs, instead of the breast, but you will have to adjust the cooking time.
*If you don’t have a grill, you can prepare the chicken in the oven. Place four chicken breasts into an 8 ” by 8″ casserole dish and cover with marinade. Cook at 350 degrees until chicken is done. (The internal temperature should reach 165 and the inside of the chicken breast should not have any pink.) Start checking the chicken after approximately 20 to 25 minutes. The total baking time should be about 30 to 40 minutes.
