Honey Coconut Rum Cake Recipe

I’ve been a fan of traditional rum cake since I was a child. Every year my mother would make one for Christmas. I carried on the tradition, but then I began experimenting. We’ve had everything from an amaretto cake to a chocolate bourbon pound cake. When I received several jars of honey recently, I pushed one of them further back into the pantry so I could use it for recipes. Honey goes fast in our home! I changed some of the ingredients from a traditional rum cake recipe to give it a new flavor twist. Here’s my version of a traditional rum cake, this honey coconut rum cake recipe.

Honey Coconut Rum Cake Recipe

The beauty of this cake is that it starts with a boxed mix so it’s easy to whip up. Be sure to use Coconut Milk in this recipe and not Cream of Coconut. This cake has a light lemon flavor that was a hit with friends, family, and neighbors. In the words of the 3-year-old in our family, “This cake delicious.”

Honey Coconut Rum Cake Recipe
Recipe Type: Dessert
A delicious cake that starts with a boxed mix and gets a twist from coconut rum and honey.
Ingredients
  • 1 box lemon cake mix
  • 1 cup of coconut milk
  • 1/3 cup vegetable oil
  • 3 eggs
  • 3 tablespoons honey
  • 3 tablespoons coconut rum
  • Icing:
  • 1 stick softened butter
  • 2 tablespoons coconut rum
  • 1/4 cup coconut milk
  • 2 tablespoons honey
  • 1/2 cup granulated sugar
Instructions
  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, blend together the cake mix, coconut milk, and oil.
  3. Blend in eggs.
  4. Blend in honey and coconut rum.
  5. Spray a 10 cup bundt pan with cooking spray.
  6. Pour batter evenly into bundt pan.
  7. Bake 30-40 minutes. Begin checking to see if a knife inserted into the batter comes out clean after around 25 minutes as ovens differ in their baking times.
  8. Remove cake from oven and allow to cool for 30 minutes before removing from the pan.
  9. Icing:
  10. In a medium saucepan over medium heat, melt the butter.
  11. Add sugar and stir.
  12. Add coconut milk, honey, and coconut rum.
  13. Bring mixture to a boil, stirring constantly.
  14. Reduce heat to simmer and allow to simmer 5 minutes, stirring occasionally.

Baking Tips:

Honey Coconut Rum Cake

*If you don’t have coconut rum, substitute light rum instead. It will have a slightly different flavor, but it will still be good.
*If you would like a gluten-free version of this cake, substitute a gluten-free boxed cake mix. Rum is considered to be gluten-free because it is made from sugar cane.
*If you don’t have a package of lemon cake mix, you can substitute a package of yellow cake mix and 1 teaspoon lemon flavoring.
*If you prefer not to use rum, you can make the cake by substituting 1 to 2 teaspoons of rum flavoring.
*To make sure the cake does not stick to the sides is to spray the pan lightly with cooking spray.
*I always apply my icing to the bottom of the cake when it is cooling. I use a clean chopstick to poke holes evenly around the cake and then spoon on the icing. Leftover icing can be poured over the top of the cake when it has cooled and been removed from the pan. But, if you prefer, all the icing can be poured over the cake after it has been removed from the pan.
*Allow the cake to cool for 20 to 30 minutes before removing from the pan.
