How To Make Baby Rattle Cupcakes

I found myself hosting Brittany’s baby shower by accident.  Her BFF is “in charge,” but her apartment wasn’t large enough to hold everyone. Could it be at my house? Sure. Then, the matter of food came up.  Did I mind making some cupcakes since gluten free foods were expensive and the BFF’s cooking adventures as a child had caused damage to my kitchen? That’s when I searched and found how to make baby rattle cupcakes.  I jazzed up the basic recipe a little and made homemade icing in pink, but the icing could be done in any pastel color. I used a gluten free cake mix, but  if you are not gluten free, substitute a regular cake mix. It’s cheaper.

To make the cupcakes, prepare the mix as directed on the package and add 1/2 cup sour cream and 1 teaspoon almond extract.  Pour cupcakes into wrappers and bake as directed. Allow cupcakes to cool completely.

Prepare Almond Buttercream frosting or use your own favorite frosting recipe. You can also use canned if you are in a hurry. Tint the frosting whatever color you prefer using food paste coloring.  I use Wilton brand. Pipe the frosting onto the cupcakes and add sprinkles.

Insert a lollipop stick (find them in the cake baking section of craft stores or Walmart) into the side of the cupcake. Attach a small gumdrop to the end of the stick.

Add a ribbon in the color of your choice to the middle of the lollipop stick and tie it into a bow.

Serves: 24 cupcakes
Ingredients
  • 1 boxed yellow or chocolate cake mix, regular or gluten free
  • ingredients listed on package to prepare cake (eggs, oil, water)
  • 1/2 sour cream
  • 1 teaspoon almond extract
  • Almond Buttercream frosting (or frosting of your choice)
  • Pink Sprinkles
  • Lollipop sticks
  • Thin ribbon in color of your choice
  • assorted gumdrops
  • paste food gel
Instructions
  1. Mix cake mix as directed on package. Stir in almond extract and sour cream. Bake as directed on package for cupcakes. Remove from oven and allow to cool completely.
  2. Prepare almond buttercream frosting or frosting of your choice, Tint with paste food gel in color(s) of your choice. Pipe frosting onto cupcake. Add sprinkles.
  3. Push a lollipop stick into one end of the cupcake. Attach a gumdrop to the end of the lollipop stick. Using ribbon, tie a bow around the middle of the lollipop stick.
