Outdoor summer entertaining is one of my favorite activities. The sounds of birds chirping, soft breezes blowing and not having to spend as much time cleaning my house for visitors? Count me in! To start our evening, I like to serve a sweet, refreshing beverage. One day, after realizing I had an unopened bottle of unsweetened pineapple juice and some limes and lemons in my fridge, I began experimenting. The result were Pineapple Lime Sparkling Drinks. I could serve them as gluten free mocktails, and because I used Equal®, the diabetics in our family and my prediabetic hubby, who needed to reduce his sugar intake and watch his blood glucose levels , could enjoy them too.
Here’s the easy recipe to make this delicious pineapple lime refresher.
Tip: Before you begin, make sure your juice is chilled! I began by mixing 1 cup pineapple juice with 1 tablespoon lime juice. The lime juice adds a refreshing tart flavor, but if you are not a fan of tartness, reduce the lime juice to 3 teaspoons.
Add one cup sparkling water to the pineapple lime mixture, along with four packets of Equal®. The Equal® adds just the right touch of sweetness and flavor and has zero calories. Delicious juice drinks with less calories? Yes, please!
Stir the mixture well and pour into two eight ounce glasses. This juice is tasty prepared this way, but here’s the secret to kick it up a notch. Add one slice each of lemon and lime to your glass. Or, if you’re feeling wild and crazy, add two slices each. Drink immediately or chill.
- 1 cup unsweetened pineapple juice
- 1 tablespoon lime juice
- 1 EACH lemon and lime, sliced
- 4 packets Equal Sweetener
- 1 cup sparkling water
- Mix pineapple and lime juice together. Add water and Equal. Stir until well blended. Pour into glasses and add one slice each lemon and lime.
I use Equal® often as it adds sweetness to any cold beverage. (Have your tried it in strawberry lemonade tea? Or you could just use it in tea or lemonade.) I also use it in baking, substituting it for sugar in my diabetic friendly desserts. It can also be sprinkled on cereal or fruit.
