I love home grown produce, but this year, when my neighbor brought over a huge sack of freshly picked corn, my plans went awry. I stashed the corn in the fridge and then encountered a series of unfortunate events. By the time I was able to look in my fridge again, the corn looked a little on the hard side. Not wanting to waste any home grown goodness, I found my mom’s old recipe for Tomato Corn Relish.
This recipe is pretty much a cinch to make and is great for anyone who wants to dabble in canning. Here’s all you need to make four pints:
15 ears of corn, husked, silked and kernels cut off from the cob
1 medium red bell pepper, chopped
1 medium onion, chopped
8 medium tomatoes, chopped(I used yellow tomatoes, because that’s all I had)
1/4 cup (2 ounces) minced garlic
2 teaspoons each: salt & pepper
1/2 cup (4 ounces) sugar
1 cup (8 ounces) vinegar
Place all ingredients in a large saucepan and bring to a boil. Reduce heat to medium and allow to cook 20 to 30 minutes or until most of the liquid has been absorbed. Be sure to stir frequently to prevent burning. Remove the mixture from heat and allow to cool. Pour the mixture into four pint jars, leaving about 1/2 inch of space from the top of the jar. Add lids and place in a boiling water bath, being sure to keep them completely covered, for twenty minutes. Remove jars and allow to cool.
If you prefer a sweeter or more tart relish, adjust the amount of sugar and vinegar to suit your tastes. So far I have had no complaints from anyone in the family over the relish and my husband even proclaimed it, “Tasty!” I think next time I will use red tomatoes and different colored peppers to give it more color.

No, I have never canned before but have so many tomatoes this year that I want to can stewed tomatoes with zucchini.
I have been canning for a couple years now. My advice. Don’t be afraid to start small. You don’t have to have lines of jars when you are done. Start with small amounts and get used to the porcess before going all out.

Yes I have canned before mostly beans and jams. This year I am canning tomatoes, dill pickles,squash,saurkraut and pickled eggs. My only canning tip is make sure your jars are free of cracks and do not be afraid. I was always afraid of making mistakes now I just do my homework and hope for the best.
