Some nights when I come home tired and cranky, the last thing I want to do is drag myself into the kitchen to make an elaborate meal, or for that matter, any type of meal. When my foolproof plan to convince someone in the family the urgent need to grill goes awry, I have a backup plan. Believe me, I depend on it often! I keep the ingredients to quick, simple meals on hand for a speedy supper. These meals have become family favorites and are requested on nights I don’t mind cooking, making it a win-win for me!
The kids love spaghetti so I always keep a jar of Classico Family Favorites Traditional Pasta Sauce on hand, and it’s an easy dish to whip up. But some nights I want something different. That’s where my simple recipe for Traditional Italian Grilled Cheese and Veggie Sandwiches comes in. I based it on one of my favorite veggie sandwiches and added the grilled cheese aspect to please the kids. We both get the flavors we want and it takes around fifteen minutes to prepare. You’ve got to love simplicity!
Here’s all you need to make six sandwiches:
1 package of 6 sub rolls (I usually pick up a pack in the Walmart deli when I am grabbing my Classico sauce)
12 Slices Cheese of your choice (I like mozzarella or provolone)
1 eacha large onion and a large bell pepper, chopped
1 (8 ounce) package sliced mushrooms
2 tablespoons butter, melted
1 jar Classico Family Favorites Parmesan and Romano Pasta Sauce
To make the sandwiches:
Combine the melted butter, onion, green pepper and mushrooms in a large skillet. Saute the veggies over medium heat until lightly browned and tender. This should take five to ten minutes.
When the veggie mixture is done, add the Classico Sauce. Stir until well mixed and place on simmer.
Split the sandwich buns in half and add two slices of cheese to each bun. There are two ways to complete these. Either place the sandwiches on an oven safe baking tray and broil for five minutes or until cheese is toasted and bread is lightly browned or grill in a skillet on the stove, using two tablespoons butter per sandwich, until cheese is melted and bread is toasty. Add the veggie and sauce mixture to the sandwiches and serve immediately. I serve the sandwiches with either a salad, macaroni and cheese or potato chips, depending on how much effort I want to put into my meal.

This looks delicious. I ate grilled mushrooms and bell peppers for lunch today. I was going to put them in a tortilla but decided just to eat them alone. I think I should have added some bread and sauce and made a sandwich like yours.

This looks like a great sandwich! I love having grilled cheese for lunch, and I enjoy them usually with some tomato soup or even a broccoli soup! Yours would be perfect with tomato soup for sure!
