It’s been over 250 years since some of our ancestors immigrated here from Ireland, but that doesn’t stop me from making some cute desserts for the kids on St. Patrick’s Day. It also doesn’t stop me from pinching them if they forget to wear green, but that’s a different story. They are happy to return the favor, “She forgot to wear green! Let’s pinch her!” This year I had the perfect idea in mind for a treat, using an old family recipe. Unfortunately, the idea went awry for so many reasons. I thought I had all the ingredients but realized, whoops, I couldn’t find one of them. A freak snowstorm meant I was trapped in the house and couldn’t go to the store to purchase the ingredient. Meanwhile, I had placed the gelatin in the freezer to cool it down and forgot about it. Trust me when I say do not attempt this at home. I wanted to salvage the recipe so I tried mixing different ingredients. Surprisingly, the result was these two toned lemon lime shamrocks, proving sometimes cooking disasters can be saved.
- 1 (12 ounce) lemon lime soda
- 1 package (3 ounces) lime gelatin
- 1 package (3 ounces) lemon gelatin
- 1 can (15 ounces) sweetened condensed milk
- Mix the lime gelatin with the lemon lime soda. Stir until dissolved. Pour the lime gelatin into a shallow bowl and place in the fridge for one hour. After one hour, remove gelatin from fridge. Cut into squares and place into an 8″ by 8″ pan. In a separate bowl, combine sweetened condensed milk and lemon gelatin until gelatin is dissolved. Pour the lemon mixture over the lime gelatin and stir gently with a spoon. Refrigerate until set, approximately four hours. Using a shamrock cookie cutter, cut shamrocks from the gelatin mixture. Serve immediately.
