I love Legos as much as my children. Ssh! Don’t tell! They promote creativity, imagination and sometimes, stumbling blocks through my house late at night. My children will tell you I am all about “special days” at our home. Who doesn’t want to celebrate a Winnie-The-Pooh themed day or a special Irish meal in honor of St. Patrick’s Day? In honor of the many (many, many, many) Legos lying around my home, I have some ideas for a Lego themed day including a fun Legos Cookie recipe.
Ingredients
To make the cookies you’ll need a package of refrigerated sugar cookie dough, flour, vanilla frosting, food coloring in your choice of colors and jellybeans. I’m all about easy baking and allowing children to help so anything “semi-homemade” is good with me. If you prefer, you can make your own cookie dough from scratch. Tip: These can also easily be made gluten free by using a package of gluten free cookie dough and gluten free flour.
Directions
Mix the cookie dough with the flour until the mixture is firm. I placed the dough in the bottom of individual brownie cups to make sure they turned out square and then cut them in half after they finished baking.
After the cookies cooled, I melted the frosting in the microwave for 30 seconds and then divided it into 3 bowls. I colored the frosting yellow, blue and pink. I dipped each cookie into the frosting until each cookie was covered and immediately added two halved jellybeans to the top. Allow the frosting to set and you have cute Lego Cookies.
Our fun Lego day consisted of playing with Legos, making Lego cookies and relaxing with watching the two new Lego shows, Legos Friends and Legos Bionicle, which premiered March 4th on Netflix.
Printable Recipe
- 1/2 package refrigerated cookie dough, can use gluten free
- 1/2 to 3/4 cup flour, can use gluten free
- 1/2 container (8 ounces) vanilla frosting
- 24 jellybeans, cut into halves
- Red, blue, Yellow food coloring (or any color of your choice)
- Mix cookie dough with flour until completely combined. Roll out dough and cut into rectangles. (Or place dough into individual brownie cups and cut in half when baked.) Bake for 6 to 8 minutes. Allow to cool.
- Melt frosting in microwave for approximately one minute or until liquid consistency. Divide into three bowls and add individual food coloring to each bowl. Dip cookies into icing until cookie is covered with icing. Place on a cookie sheet and allow icing to harden. While icing is still melted, add two jellybean pieces to the top of each cookie to resemble the tops of legos.
