Lemon Easter Basket Cupcakes Recipe

These Lemon Cupcakes with Lemon Frosting are delectable on their own. I used a recipe from Real Simple, and added yellow food coloring to give it a fresh spring look.  I made mini cupcakes for bite sized treats, but you can make regular cupcakes.  The “baskets” come together in minutes. If you are in a hurry and don’t want to make them from scratch, use purchased cupcakes.

A cute treat for Easter made from a delicious Lemon Flavored cupcake.
Ingredients
  • For the cupcakes:
  • 1 1/2 cups all-purpose flour, spooned and leveled
  • 1 tablespoon finely grated lemon zest
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 drops Yellow Paste food coloring (I use Wilton)
  • 1/2 cup whole milk
  • For the frosting:
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1 1/2 cups confectioners’ sugar
  • 2 teaspoons finely grated lemon zest plus 2 teaspoons fresh lemon juice
  • 1/4 teaspoon kosher salt
  • 2 drops Yellow Paste Food coloring
  • Yellow sprinkles, optional
  • For the Baskets:
  • 6 Sticks Green Twizzlers
  • Jolly Rancher Jelly Beans, 4 per min cupcake
  • Green Colored Sugar
Instructions
  1. For the Cupcakes:
  2. Make the cupcakes: Heat oven to 350° F. Line a mini 24-cup muffin tin with paper liners. In a medium bowl, whisk together the flour, lemon zest, baking powder, and salt; set aside. Use an electric mixer to beat the butter and sugar on medium-high until fluffy. Beat in the eggs, one at a time, then the vanilla.
  3. Add the flour mixture in 3 additions and the milk in 2 additions, beginning and ending with the flour mixture. Mix just until combined. Add food coloring. Divide the batter evenly among the muffin cups. Bake until a toothpick inserted in the center comes out clean, 15 to 20 minutes. Cool completely before frosting.
  4. To Make Frosting:
  5. Make the frosting: Using an electric mixer, beat the butter and sugar on medium-high until light and fluffy, 3 to 5 minutes. Beat in the lemon zest, juice, and salt. Add food coloring and stir.
  6. To Make Baskets:
  7. Divide each of the four green twizzlers in half. Cut each twizzler into four pieces. Sprinkle colored sugar on each cupcake. Add four jellybeans to the cupcake. Use one twizzler piece on each cupcake to make the basket handle, inserting one end into each side of the cupcake. Serve and impress guests.

  7. I love any recipe that makes the batter from scratch. My sisters favorite flavor of any cake or cupcake is anything lemon. I may try to whip up a batch of these for her before Saturday! I am not sure how you got that handle to stand up so well in the cupcakes, though.
