Since my daughter was diagnosed with celiac disease recently, I have been trying to find good tasting recipes the entire family can enjoy because I don’t like cooking two separate meals. I want simple recipes that don’t call for a ton of fancy ingredients and can be put together quickly. If you’ve ever looked at the ingredient list in some gluten free recipes you’ll know what I mean. I have never heard of some of that stuff! This lemon herb chicken has minimal ingredients and comes together in a flash. It’s my kind of recipe.
Lemon Herb Chicken Recipe

A gluten free recipe the entire family can enjoy.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 medium sized lemon, juiced
- 1 tablespoon minced garlic
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- salt and pepper to taste
- olive oil
Instructions
- Mix garlic,lemon juice, Italian seasoning, red pepper flakes and salt and pepper together in a small bowl. Rub each side of the chicken with a small amount of the mixture. Meanwhile, preheat a small amount of olive oil in a skillet. Add chicken breasts and saute chicken, five to ten minutes on each side, until juices run clear. Serve on a bed of wild rice.
