Summer in the South means homemade ice cream. What’s better than sitting outside on a hot day, talking with friends and enjoying a bowl of homemade ice cream? I was searching for something different to make and came across a recipe from Southern Living for Lemon Ice Box Pie Ice Cream. I adapted the recipe to make it gluten free. You guys, this is seriously amazing. I’m talking The. Best. Ice. Cream. Ever. You don’t have to make it gluten free, but it’s so good no one knew.
Lemon Ice Box Pie Ice Cream Recipe
The recipe called for graham crackers, but I couldn’t find them. It also called for less lemons than I used. I wanted a more tart flavor, but if you prefer a lighter lemon taste reduce the amount of lemons.
This is all you need to make the most delicious ice cream ever (in my opinion);
Sweetened condensed milk, half and half, lemons and vanilla sandwich cookies. I used gluten free sandwich cookies, but regular sandwich cookies will work.
Before you begin, juice the lemons and remove any seeds. If you don’t want to juice lemons, you can substitute lemon juice, but you’ll lose some of the fresh flavor. Also, crush the sandwich cookies. I put them in a zip topped freezer bag and pound them with my hand. It’s good stress relief, an added bonus. Like a tarter flavor? Add some grated lemon peel to the mix.
Mix the half and half and sweetened condensed milk until blended. Stir in the lemon juice and add the crushed cookies. Stir until well mixed and pour into an ice cream freezer. There are people out there who say hand cranking is part of the fun. I won’t say these people are wrong, but I really, really like my electric freezer. When firm, take out and enjoy.

- 1 can (14 ounces) Sweetened Condensed Milk
- 2 cups (16 ounces) half and half
- 10 to 12 vanilla sandwich cookies, crushed
- 4 Lemons, juiced and seeds removed
- (optional: 1 tablespoon lemon peel)
- Mix sweetened condensed milk and half and half in large bowl. Add lemon juice, stir until blended. Add cookies, mix well. Add lemon peel, if using. Pour into ice cream freezer container and freeze according to manufacturers instructions.
This recipe can easily be doubled. And probably should since it will disappear quickly.
