Lemon Lime Parfait Recipe

We’re approaching the Dog Days of Summer in the South.  Want to know what that means? It’s hot; almost unbearably hot. With the high temperatures and high humidity I’ve heard people say it seems like “sitting inside someone’s mouth.” Yuck!  But, sometimes, just sometimes, I want dessert. And I don’t want to cook.  No one wants to be in a kitchen that is heating up to 100 degrees.  It’s no bake dessert for the win!  I found I can whip up a fun Lemon Lime Parfait Recipe in less than ten minutes, using four ingredients.  We can enjoy our dessert and I can pretend like I fussed. If family members want to praise me for my devotion to making treats, even in the stifling heat, I will accept it.

Lemon Lime Parfait Recipe

If you want to jazz the recipe up a bit, you can add a dash of food coloring, some whipped cream, and some lemon or lime slices.  Or not. It’s totally up to you. These can be made as mini treats and served in individual sherbet glasses or ice cream bowls, or placed in a trifle bowl for one large dessert.  If you need to feed a crowd, you can easily double or triple the dessert.

Lemon Lime Parfait Recipe
Ingredients
  • 1 (4 ounces bag) Mrs. Thinster’s Key Lime Cookie Thins
  • OR 1/2 cup crushed vanilla wafers
  • 1 (8 ounces) package cream cheese
  • 1 (13 ounces) can Sweetened Condensed Milk
  • 1/2 cup lemon OR lime juice
  • optional: few drops of green food coloring
  • optional: whipped topping
Instructions
  1. Crush Mrs. Thinster’s Cookie Thins OR vanilla wafers into crumbs. Add 2 to 3 teaspoons crumb mixture to four individually sized parfait bowls.
  2. Blend Cream cheese, sweetened condensed milk, and lemon OR lime juice until smooth. Add a few drops of food coloring, if desired. Blend until mixed. Pour mixture into dessert bowls.
  3. Sprinkle each parfait with remaining crumb mixture.
  4. Top with whipped cream and a lime or lemon slice, if desired.

For my crust, I used Mrs. Thinster’s Key Lime Pie Cookie Thins, of which we received a sample, to give the recipe more flavor.
