Lemon Poppy Seed Bread Recipe

“I miss lemon poppy seed muffins and bread,” Brittany told me. “I haven’t been able to have them since I found out I had Celiac disease.”  Conversations like this are no big surprise in my family. I can be discussing a serious topic when one of the kids, including my son-in-law, Justin, will gaze blankly into space and say, “You know what I’d like to have?” Before I can ask they proceed to tell me what sort of food they haven’t had recently. I’m not sure if it’s a compliment to my cooking or if they just phase me out when I start talking, but I’ll pretend it’s a compliment. I set out to find the perfect easy lemon poppy seed bread recipe. After searching through a few of my old church and community cookbooks, I found the perfect recipe.

The Best Lemon Poppy Seed Bread Recipe

This recipe is great because it’s semi-homemade and has only five ingredients, plus water. It’s a snap to mix up when you’re in a hurry, with a prep time of around five minutes. This recipe is simple enough for the beginning cook to make, but it tastes good enough people will think you fussed.  And there’s minimal cleanup time too, although I always hint that someone else should clean up the kitchen. It rarely works, but I plan to keep trying.

A box of lemon cake mix
A box of  instant lemon pudding mix
eggs
oil
water
poppy seeds.

How to Make Lemon Poppy Seed Bread:

Step 1: Preheat oven to 350 degrees.
Step 2: In a medium bowl, add the lemon cake mix and instant lemon pudding mix. Stir gently to mix.
Step 3: Add the oil, water, and eggs. Using a hand mixer, stir ingredients until blended.
Step 4: Stir in poppy seeds.
Step 5: Pour into four greased (just spray them with cooking spray) mini loaf pans and bake for 30-40 minutes or until a knife inserted into the center comes out clean. Start checking the loaves after 30 minutes as some ovens tend to cook faster than others.

Cooking Tips:

*Need a gluten-free version? Use a gluten-free lemon cake mix. I made mine gluten-free and no one knew until I told them! 
*This recipe can be adapted to make two loaves of lemon poppy seed bread instead of four mini loaves. Just use two 9″5 by 5″ loaf pans instead of the mini loaf pans.
*You can also make lemon poppy seed muffins by adding the batter to a 12 cup muffin pan.
