Have I mentioned how much I love all things lemon? It’s such a fresh flavor, reminding me of summer and sunshine! My daughter has a less positive memory of lemons, as my aunt and uncle have a lemon tree in their yard. When my uncle would invite her out to help pick lemons, he would pick them and toss them down for her to catch. To this day she still believes my uncle was simply trying to pelt her with lemons. Regardless of our lemon memories, everyone in the family loves this easy Lemon Ice Box Pie Cupcakes recipe.
Lemon Ice Box Pie Cupcakes Recipe
I believe in making desserts as easy and uncomplicated as I can, so I begin my cupcakes with a box of purchased cake mix (in either gluten free or regular) and add a fix mix-ins to give it a homemade flavor.
While the cupcakes are baking and cooling, I whip up the lemon ice box pie filling. The original recipe my mom used contained raw eggs, so I just leave them out and use sweetened condensed milk and lemon juice.
Once the filling is prepared, scoop a small spoonful of cake out of the top of the cupcake and replace it with lemon filling. Tip: Save the cake crumbs and use them to make ice cream parfaits.
- 1 box (18.5) ounce classic yellow OR lemon cake mix (mixed as instructed on the back of the package) You can use GLUTEN FREE cake mix OR REGULAR cake mix.
- 1/2 cup sour cream
- 1 teaspoon vanilla
- Filling:
- 3/4 cup sweetened condensed milk
- 2 tablespoons lemon juice (adjust to taste)
- Topping:
- 2 cups heavy whipping cream
- 1 teaspoon vanilla
- (OR 1 bottle of canned whipping topping)
- Mix cake mix as directed on package. Stir in sour cream and vanilla until blended. Bake as directed for cupcakes on package. Remove from oven and allow to cool completely.
- For filling: Mix sweetened condensed milk and lemon juice until blended. Store in fridge until ready to use. Once cupcakes are cooled, scoop out one teaspoon of cake from each cupcake and replace with one teaspoon of lemon filling.
- For topping:
- Mix heavy whipping cream and vanilla together in a large bowl using a mixer. Continue until stiff peaks form. Gently top each cupcake with the whipped cream mixture.
- Store in fridge.
You can make fresh whipped topping. Or if you’re in a hurry, just use the whipped topping from a can. (Like Redi-whip.) Store the cupcakes in the fridge and prepare yourself for compliments.
