Creamy Jalapeno Tacos

I think my kids plot against me when I am not looking.  How else can I explain their need for completely different toppings or ingredients from their siblings?  One food they can all agree on is tacos.  That’s why I sneak them into our menu as often as I can.  They are also budget friendly. I can always find printable coupons to save me money on ingredients.  I spend a lot of time tweaking basic recipes to add flavor. Really, that’s just an excuse. I spend a lot of time tweaking recipes to include ingredients I have on hand.  Did you know Kraft makes a Taco Bell Creamy  Jalapeno Dip? I didn’t, but it is now a staple in my kitchen!  It makes a tangy, tasty addition to my taco recipe. Everyone loves it, but no one can guess the secret!

Ingredients
  • 1 lb (16 ounces) ground beef
  • ½ cup (4 ounces) Philadelphia Cream Cheese
  • 2/3 cup (6 ounces) Taco Bell CreamyJalapeno Dip
  • 1 package (2 ounces) taco seasoning
Instructions
  1. Brown the ground beef in a medium skillet and drain. Return the meat to the skillet and add the taco seasoning, cream cheese and Jalapeno Dip. Bring to a boil, reduce heat to low and allow to simmer 10 minutes.

Making the recipe is the easy part, getting the kids to agree on toppings is another!  I learned the easiest way to please the kids and their friends is to make a DIY Taco Bar.  I add soft and hard shell tacos, olives, tomatoes, lettuce, cheese, peppers, onions, more creamy jalapeno dip, taco sauce  and the taco meat on my island (or if it’s summer, outside on my potting table) and have them help themselves. Everyone gets exactly what they want, no one complains, and I am super mom for fixing a dinner everyone likes. It’s a total win-win!
