Every year the kids ask me to make homemade Easter candy. Their absolute favorite candy is my chocolate peanut butter eggs, I never have any trouble getting the kids into the kitchen to help when I make a batch of these. This year I wanted to experiment with my recipe, changing it up to make them extra special. I was browsing in Walgreens recently and spotted a box of new Honey Bunches of Oats Morning Energy cereal in Chocolately Almond Crunch. I picked up a box because I need all the energy I can get in the morning. I had the box setting on my countertop when I started to make my peanut butter eggs and thought, “What would happen if I added a cup of this to my recipe?” The result was a delightfully crunchy texture and a bonus chocolatey taste. Plus, since the cereal contains 5 grams of fiber per serving, I can feel less guilty if I eat two of these candies. After all, I am getting fiber and energy!
Instead of eggs this year, since I was mixing up the candy and getting all adventurous, I decided to make Chickens. These cute little chickens weren’t much more difficult to make than eggs, but I do have a few words of advice when you make them. First, be sure to freeze the peanut butter mixture for several hours (at least two to four) to be sure the candy is frozen solid. If not, the chocolate mixture will cause the candy to melt, making a big mess. I suggest working on half a batch at a time, leaving part of the candy in the freezer so it doesn’t soften. Add the candy features immediately so the dipped candy will not have time to harden.
Here’s how to make them:
- 1 1/2 cups (12 ounces) peanut butter
- 1 1/2 cups (12 ounces) powdered sugar
- 1/2 cup (4 ounces) butter (should equal one stick)
- 1 cup (8 ounces) Honey Bunches of Oats Morning Energy Chocolatey Almond Crunch
- 1 package (12 ounces) yellow candy melts
- 24 candies such as mini M& M’s or Sixlets (black, if possible)
- 6 orange starburst
- 12 yellow starburst
- colored yellow sugar, optional
- (optional: yellow colored sugar)
- Melt butter in microwave for 30 seconds. In a medium bowl, mix peanut butter and butter until smooth. Stir in powdered sugar, blend until well mixed. Add cereal; stir. Roll mixture into twelve balls approximately 1 inch in diameter. Place on waxed paper and freeze two to four hours.
- When firm, remove from freezer. Place the candy melts in a microwave safe bowl and microwave for 30 seconds. Stir and microwave 30 more seconds.
- Dip the peanut butter balls into the candy melts and cover with candy coating. Place on waxed paper to harden. Immediately add features, using two sixlets for eyes, one half of a starburst shaped into a triangle for a nose and one yellow starburst, divided into two rectangles for feet. Colored sugar can be added if desired.
If the candy melts start to harden, microwave them for 30 more seconds and stir. Some of my candy melts were not smooth after I had to microwave the mixture again, so I added yellow colored sugar to cover the “rough edges.” To make peanut butter pops, add lollipop sticks to the peanut butter balls before freezing.
