I am all about entertaining, especially in the summer, when I can host everyone on my patio. I always try to have a dessert, but sometimes I don’t have a lot of time preparing something from scratch. I’ve also noticed kids don’t particularly care for fancy-smancy desserts. That’s were my “cheater’s kitchen” recipes come in. I use items I already have on hand to make desserts that look a little fancier, but are still kid approved. I came up with these easy Mini Muffin Ice Cream Sandwich bites when I was short on time, but wanted something to please both kids and adults. Entenmann’s had sent me coupons for their mini muffin bites, I had some ice cream in the freezer and I always keep chocolate melts on hand. I knew this was something I could pull off in minutes. Plus, these can be wrapped and frozen to have for any surprise guests.
I started by slicking my Entenmann’s Little Bites in half. Then I melted some chocolate bark in the microwave and dipped each half of the muffin into the chocolate. I set these aside to allow the chocolate to harden.
I scooped a firm tablespoon of ice cream and placed it on the side of the muffin not covered in chocolate, then placed a muffin half on top of the ice cream. Helpful hint: Make sure the ice cream is firm, it will melt quickly.
I’m happy to serve Little Bites to the kids because not only do they come in snack sized packages, Entenmann’s Little Bites have shared some news, just in time for Earth Day. Entenmann’s has partnered with Terracycle for the 3rd annual “Turn Trash Into Cash” Program. As part of the “Little Bites Pouch Brigade,” schools, communities and individuals can collect empty Little Bites packages and send them to Terracycle. The empty pouches are then made into innovative new products.
