M&M Smores Bar Recipe

Do you ever find one of those recipes you just have to try? I find them all the time and then promptly forget them around dinnertime. I usually remember them around 2 AM and think, “Hey! I need to pick up the ingredients.” I was browsing through one of my Taste of Home Five Ingredients or Less Cookbooks when I found a recipe for Peanut Butter Smores Bars. They sounded tasty and, best of all, easy, but I didn’t have all the ingredients. I wrote them on my shopping list and discovered I couldn’t find rolls of peanut butter cookie dough in the dairy section. Not to be daunted, I picked up a roll of sugar cookie dough instead.  I headed home to prepare my creation.

As I was digging through the pantry to get my marshmallows, I spotted a bag of M&Ms.  I pulled them out to add to the recipe because what recipe can go wrong if you add M&Ms? This has to be the easiest recipe I have ever made, with only four ingredients, and it tastes so good.  Here’s what you need to make it:

Start with a package of refrigerated sugar cookie dough (you can use peanut butter cookie dough if you can find it) and spread the dough on a 9″by 9″ greased baking dish.

Bake the dough until it is done, but still soft.  Immediately add marshmallows to the top of the cookie dough.  I used colorful bunny marshmallows for a spring look.

As soon as you’ve added the marshmallows, top them with the chocolate chips and M&Ms.  Allow the mixture to cool, then cut into bars.  You can spread the marshmallows with a knife if you would like, but they will melt together and hold the melted chocolate chips and M&Ms in place.

M&M Smores Bar Recipe
Ingredients
  • 1 (16 ounce) package of refrigerated cookie dough (I used sugar)
  • 1 1/2 cups EACH M&Ms and Chocolate Chips (I used milk chocolate chips)
  • 2 cups Marshmallows
Instructions
  1. Place cookie dough in greased 9″ by 9″ pan. Bake until dough is done but soft. (I baked on 350 degrees for approximately 8 minutes.) Immediately top with marshmallows. Then add chocolate chips and M&Ms. Allow to cool and cut into bars.

These were a big hit with my extended family who received bars when I discovered I was eating way to many.  You can experiment with different flavors of cookie dough and different types of candy toppings to make these into your own personal favorite.
