The Monte Cristo Breakfast on The Go Sandwich

I have spent years trying to get my children to eat a healthy breakfast. Their biggest excuse is, “I don’t have time!” One of my go to strategies to trick them into thinking eating breakfast is their idea is having plenty of frozen breakfast options available. They can be heated quickly and used for an easy breakfast on the go. My problem is no one in the family has the same tastes. I didn’t want to make a ton of different meals so I came up with a gourmet build your own Monte Cristo sandwich.

I started with my base ingredients; Aunt Jemima frozen waffles, deli cheese and chicken. I placed the waffles on a baking sheet and topped one side with a slice of chicken and the other with a slice of cheese. While the kids are getting ready in the morning I can slide the pan into the oven and allow the waffles to heat until crisp.
Breakfast Sandwich

I leave toppings on the island and allow everyone to build their own sandwich. Our typical toppings include thin slicked avocado, lettuce, tomato and zesty spinach dip. The beauty of these sandwiches is how easily they can be adapted. Don’t want veggies? Only serve them with cheese and chicken. Substitute ham or bacon for the meat or mayo and mustard for the toppings. The sandwiches can also be assembled with just the cheese and meat and then double wrapped with waxed paper and stored in a freezer bag until needed. Just remove from the freezer, unwrap and heat.

An adaptable Monte Cristo frozen waffle sandwich. Perfect for any time of the day!
Ingredients
  • 14 waffles
  • 7 slices of Havarti Cheese (or cheese of your choice)
  • 7 slices of deli chicken or deli ham
  • 2 Tomatoes, thinly sliced
  • 1 avocado, thinly sliced
  • 1 cup of mixed greens
  • ½ cup spinach dip
Instructions
  1. Place the waffles onto a baking sheet. Add a piece of cheese to seven of the waffles and a slice of deli chicken to the other seven. Bake in a 350 degree oven for 10 to 15 minutes until waffles are lightly brown and cheese is melted. Top with a slice of tomato, two thin slices of avocado, one to two tablespoons of spinach dip and serve immediately.
