Once upon a time, when my kids were young and did cute things, I had a family blog called Mom’s Mutterings. When the kids weren’t so thrilled about having their experiences shared, I switched to this blog in 2010 and shuttered the old one. One of my most popular recipes was for an Italian Cream Cake. It was an old family recipe, passed down by my grandmother. I’m not sure where she found the original copy, but everyone in the family loved it. As a matter of fact, it was so good that my aunts, my mom and I used the recipe to make my wedding cake. Here’s the original Mom’s Mutterings Italian Cream Cake recipe.

- Ingredients for cake
- 1 cup buttermilk
- 1 teaspoon baking soda
- 2 cups white sugar
- 1/2 cup butter
- 1/2 cup vegetable oil
- 1/2 cup shortening
- 4 egg yolks
- 1 teaspoon vanilla extract
- 4 egg whites
- 2 cups all-purpose flour
- 1 to 2 cups flaked coconut (depending on how much you like these ingredients)
- 1 to 2 cups chopped pecans (depending on how much you like these ingredients)
- Frosting Recipe
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup butter, softened
- 4 cups confectioners’ sugar
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- Preheat oven to 325 degrees F. Important! Do not skip this step. It is needed to help cake cook properly. Grease three 9 inch round cake pans.
- Combine the soda and the buttermilk.
- Cream the sugar with 1/2 cup butter, 1/2 cup oil and shortening until smooth.
- Add egg yolks one at a time, beating well after each addition.
- Mix the buttermilk mixture, alternating with the flour into the creamed sugar mixture.
- Stir in 1 teaspoon vanilla.
- Beat egg whites until stiff peaks form. Gently fold 1/3 of the whites into the batter until blended. Immediately fold in the remaining whites.
- Blend in the pecans and coconut.
- Pour the batter into prepared pans and bake for 25 to 30 minutes or until done. (If a knife inserted into the center of the pans comes out clean.) Allow cakes to cool completely before frosting.
- Make the Cream Cheese Frosting:
- Beat together the cream cheese, butter, vanilla, and confectioners’ sugar until smooth. Blend in the chopped pecans. Frost cake. (Mixture should be thick.)
I’ve never tried any adaptions to the recipe or had to bake it at high altitudes, but I have seen where people have changed the recipe using apple sauce to make it lower fat or had to bake it longer at a higher altitude. The results seemed to be varied, with some people saying it was “to crumbly.”
